Flavour number two of the new choux cupcake series!
This one is filled with creamy diplomat cream and fresh vanilla cream topped with crunchy sweet burnt sugar, aka Crème Brûlée. The bitter sweet crunch goes so well with the simplicity of the choux pastry and delicious cream. Plus, it’s so crunchy at the top, the initial crack when you dive into it is just so satisfying!

Choux au Craquelin (dessert pastry made with choux pastry and topped with thin cookie disc)
This one here is filled with diplomat cream paired with lemon curd and topped with soft meringue and crumbed lemon biscuits 🍋🍋🍋
The crunchy topping and the creamy tangy filling harmonises so well, I'm just loving how each element compliments each other. So lucky to be the baker as I get to treat myself with this choux cupcake as much as I like.
