To our wonderful supporters!
After two huge years, we have made the difficult decision to put production at our little Three Mile Kitchen into hiatus. We’re not quite sure when, or if we’ll be back.
Of late, we have been at a bit of a loss as to where to focus the business in the future. We’ve swung wildly from notions of opening a cafe in town, a garden-to-table cafe at our little property just out of town, a little nook in the corner of someone else’s shop, or just continuing as we are...all of which seem both exciting and terrifying. The current model has us both working two jobs, and just generally not looking after ourselves or our little farm very well. I’m not ready to give up ED nursing in the foreseeable future, which means there’s no real light at the end of the tunnel for rectifying our work-life balance...and we are always conscious of how fleeting life is.
The process of learning to make beautiful pastry, all the failures and the small victories, have taught us so much about ourselves, each other, and what we’re capable of as individuals and as a team. We have been overwhelmed by the support and demand for our produce, and have found the relationships formed with our customers the most satisfying of all. Thank you so much for all the support over the last couple of years, we have appreciated all of the kind words, gifting of local produce, constructive feedback, and drooling emojis more than we can explain.
This hiatus will find us returning to our aspirations of living the quiet agrarian life that we had imagined when we moved to Beechworth in 2014...immersed in the garden, walks in the hills, noses in books, cooking, baking, brewing, preserving, and bottomless pots of tea. In the meantime, I intend to continue to use this page to document life on our little plot in the hills, so stay tuned if that sounds like your bag, and we very much hope to see you soon. X 📸by 🍽 by

Sometimes we bake extra special cakes, for extra special days...but only if people ask extra nicely, because we get performance anxiety with event cakes. This billowy little number is a lemon meringue cake 🍋 ...layers of vanilla chiffon cake and sharp lemon cream, swathed in Italian meringue. Then we take to it with the blowtorch, because well, playing with blowtorches is really fun...and because birthdays should be celebrated!

Good morning! We just wanted to give you a little update....we are not going to be attending farmers markets for the time being. Not because we don’t love seeing your smiling faces and meeting you...we do!! It’s because we are trying to juggle our work-life-bake balance. You see, we both work day jobs.... if you are having a bad day, you might visit me at work in the emergency department...and although it can be a tough gig, I really love it.
If you need gas and welding advice, Steve’s your nerd.
In the hours surrounding these roles, we bake...and we love it!
We are continuing to supply our regular distributors, so there will still be plenty of pastry getting about the northeast on a weekly basis, but hopefully this time will allow us to work on our next move. We hope you understand. X

It’s heeerrrreeee!!!
Our brand spanking pastry sheeter was delivered yesterday. Sadly it was too late for us to get pastry into your faces this week, but it does mean that we’re back on track for pastry deliveries from Friday 15th. In the meantime we’ve got Blood Plum Tart, Necatrine and Raspberry Galettes, Lamingtons and bagels on various counters today and tomorrow. X

We knocked out some white peach and blackberry galettes this morning. They’re extra special because we grew the peaches and the blackberries on our own little plot...only realised ours were ripe after purchasing yellow peaches at the local grocer yesterday 🤦🏽‍♀️. Never mind, we’ll find the lovely yellow ones a good home. We’ve also got ’s beautiful sweet and sour blood plum tart, which is a bit of a quiet achiever. They’re all heading out to our stockists today and tomorrow....plus bagels, always bagels. X

It would appear that 2019 really isn’t going to be our year. Between butter dilemmas and equipment failures, we’re not having much luck. Yesterday, not long after beginning laminating our pastry for the week, there was a loud POP and CRACK....followed by smoke...and then a calm dash for the fire extinguisher. Thankfully there was no need for the extinguisher, but our pastry sheeter decided it was no longer operational. It has worked very hard for us over the last 18 months. Not bad for a second hand rig from eBay. Our resident nerd/bagel savant extracted the motor late last night so that it could be assessed first thing this morning in Albury. No dice, we need a new sheeter motor. This means no viennoiserie this week (croissants, morning buns, danishes etc). Hopefully we will be back up and running next week, but it will depend how quickly we can get parts delivered to Beechworth. We are still sending out fresh bagels, beautiful seasonal fruit galettes in flaky pastry, and a couple of other cheeky treats, so there’s no need to miss out. X

Here’s a part of Australian history that we are more than happy to get behind...the lamington! Our vanilla sponge is filled with loganberry jam made with berries from Stanley. They are then dunked in dark chocolate, and finally doused with organic shredded coconut. Yum! Also, there’s more vanilla and blueberry danishes bursting with on the way. Sorry, no bagels today as we were trying to minimise our kitchen time and energy consumption during the apocalyptic temperatures yesterday. Have a cracking day, and stay cool. Goodies on the counter at and this morning from 8.30. X

Our 5am walk across to the kitchen this morning was met with a cool breeze for the first time in days. This resulted in a little extra burst of energy....so today your Saturday morning pastry and bagels have been bought to you by some supremely geeky kitchen dancing to some excellently loud tracks from and ....the Safety Dance may have also made an appearance, but if you ask us, we’ll deny it.
Oh, and we also made blueberry and vanilla danishes...on the counter at this morning. X

We’re back in the kitchen this week after a wonderful break! We’ve eaten our way around Tasmania and Canberra, used the cool of the early morning to work in the veg patch (the weeds are somehow still dominating), and punctuated the days with pots of tea and books. Our butter supplier is taking a break...and seeing as these crunchy little creatures are about 27% butter...and seeing as we are dedicated to making fresh pastries using local butter, we have to decided to have a short break until the beautiful cultured butter comes back into our lives.
