Ryan learnt the art of pie making in England from his brother Neil, Britain's most awarded pie maker and the 2015 Supreme Pie Champion. Ryan has nurtured Neil’s award winning recipes and given them an Australian twist under the family name of Broomfields. Mrs Broomfield (Ryan’s mum) is Scottish, hence t

he Scotch pie shape. Broomfields prides itself on using the finest ingredients from local producers such as Freshwater Smokehouse Irish Heritage black pudding; ale from Northern Beaches brewing company, Nomad and Jamtown Manly Beach's secret jerk marinade. Ryan also uses the great discoveries he finds from his fellow market stall holders including Prickle Hill Farm sugar plums and Diemen’s hot sauce. Some ingredients are imported like Lancashire Cheese but the Bovril in his beef and onion pie, Ryan picks up from Harbord Growers Market.

- Slow braised stone axe Wagyu beef, roast onion and garlic puree, cinnamon, star anise and white pepper, gravy.

Chicken and Leek
- Pot roasted Bannockburn free range chicken, white wine and English mustard sauce, butter braised baby leeks and poppy seeds

Fish Pie
- smoked Trout, horseradish cream, baby peas and dill

Mushroom and Truffle
- Roasted assorted mushrooms, Truffle Cheddar, Worcestershire, thyme and mustard sauce
