Scooping ingredients with measuring cups straight from the bag
The most accurate way of measuring ingredients is with a digital scale.
If you don’t have a digital scale, scoop your flour or sugar from the bag with a spoon. Place it on your measuring cup and use a knife or spatula to level the top.
Relying on the stated baking time in your recipe
Baking times are only guidelines, especially since all ovens are different.
Start checking your cake in the oven five to ten minutes before the recipe’s suggested baking time. Test for doneness by inserting a toothpick into the center of the cake. If the toothpick comes out clean or with only a few crumbs on it, your cake is cooked.
Using cold ingredients to bake
Make sure to read your recipe to find out which ingredients are needed to be used at room temperature. Using room temperature butter, eggs or milk means that your ingredients will emulsify better and trap air, giving you a smoother batter.
Under or over-beating the batter
Excessive beating will toughen the cake. Under-mixing it can cause it to crumble.
Mix the batter until no lumps of flour show, then stop.
