🍪 ALMOND BISCOTTI RECIPE 🍪

Crispy, nutty and delicious, perfect with a cup of tea or coffee! This is also a lovely way to use leftover egg whites. ☕️💕

Ingredients:

• 90g egg whites (approximately 3 egg whites)
• 75g caster sugar
• A small pinch of sea salt
• 90g plain flour
• 18g cornflour
• 30g pistachios
• 180g almonds
• 75g mixed peel

The sweetest part of the day wasn't the cupcakes. It was hearing little voices say... "This is the best thing I've done these school holidays!", "Can I come back again?", "This was so much fun!"...

Thank you to every family who trusted me with your little ones. Seeing their proud smiles as they carried home their creations is the greatest reward. 💕

Every single seashell, mermaid tail, starfish, turtle, jellyfish, dolphin, fish and ocean creature was created by the amazing kids in our Mermaid & Beach Cupcakes Workshop! 💕🌊

They mixed colours, used moulds, added details, and let their imaginations run wild. And now... they're all ready to go on top of their cupcakes! 🧁💖

I'm so proud of what these little artists achieved. Their creativity never stops amazing me ❤️

Day 2 of our Mermaid & Beach Cupcakes Workshop! 🧜‍♀️🌊🧁💕

What an amazing afternoon! Our home was once again filled with happy faces, little hands hard at work, and so much creativity. 💖

I absolutely love watching each child create something completely unique. There were so many beautiful mermaid tails, seashells, starfish, turtles, and ocean creatures—every cupcake was different and full of imagination. 🐚⭐🐢🐠

Seeing everyone so focused, excited, and proud of what they made reminds me why I love running these workshops. Thank you to all the wonderful kids and parents for spending your school holidays with me. It truly means so much. ❤️
