Time is one of the most important ingredients in our sourdough.

We don’t rush fermentation or look for shortcuts. We give the dough the time it needs to develop naturally.

Simple ingredients. A considered process. And the time to do it properly.

It takes longer. We think it’s worth it.

A crisp choux au craquelin filled with silky Cuvée Chocolate crèmeux, finished with Mount Zero Early Harvest Picual EVOO, honeycomb and sesame.

The fresh, peppery finish of the Picual lifts the richness of the chocolate in the best possible way.
