BTS, Testing & Fails - The things you haven’t seen on the menu yet!

We are always experimenting here in the kitchen. Some of it works. Some of it is... a journey.

We’ve had some great suggestions for flavours, new products, things you want to see.
Gluten free bread however is one we keep coming back to and keep putting down again. The flavour’s there, the look is much better, but at the cost per loaf we’d have to charge you an amount that would make both of us uncomfortable. We’re not there yet but we are working on it and will let you know as soon as we have something just right.
Everything else has been coming out amazing and we can’t wait to share more with you. If you have any other ideas, suggestions or requests please let us know in the comments or when we see you on the weekend.

We make our own brown sugar!

Not because it’s trendy but because everything here starts from scratch and packet mixes do not belong in our kitchen.

It means every loaf, bagel, bliss ball, cake, slice and everything else starts as raw, certified organic ingredients. Not a mix, no shortcuts and definitely not something that arrived pre-made in a bag with instructions on the back.

It does mean a few extra steps for us which takes a little more time, but that’s how dedicated we are to ensuring we only ever make high quality organic baked goods.

Some things we just won’t budge on!

Not because we’re precious about it but because once you know certain things about your health, food and the companies running our food industry you can’t un-see it.

🌾 Certified organic. Not “organic-ish.” Not “mostly organic.” The actual certified kind.

🚫 No seed oils. Anywhere. Ever. If it’s got canola in it, it’s not coming near our kitchen.

💧 5x filtered water. Yes, we use reverse osmosis water and filter it five times. No, we don’t know what happens if you only do it four times and we’re not volunteering to find out.

🍞 Slow fermentation, always. Good sourdough and baked treats can’t be rushed.

🍳 Low-tox bakeware. Because what your baked goods are baked in matters just as much as what’s in it. Those nasties will transfer to your breads and treats if it has toxic chemicals.

This is what makes us us. Stubborn on quality, slightly obsessive with no nasty ingredients, and very okay with that.
