Bread has not always been what it is today.
For most of its history, bread was made from whole grain.
Milled close to where it was eaten.
Fermented slowly, with time.
In the 20th century, that changed.
The grain was separated into parts.
The germ and bran were removed.
What remained was white flour — shelf-stable, predictable, fast.
Fermentation was shortened.
Commercial yeast replaced natural cultures.
Additives were introduced to compensate for what the process no longer did.
The result was efficient.
It was also different.
Different grain.
Different process.
Different effect on the body.
This is not an opinion.
It is what happened.
