โ€ข 3 packages of French Vanilla Instant Pudding
โ€ข 5 cups milk
โ€ข 8 ounces of sour cream
โ€ข 1 small container of Cool Whip
โ€ข 1 box of Vanilla wafers
โ€ข 6 Bananas

1. Using a mixer, mix together the 3 packages of pudding and the 5 cups of milk. Mix until thick (about 2 minutes).
2. Add the sour cream and mix together. Stir in the Cool Whip. (I use the mixer for this part, too.)
3. Line a large dish (I use a 9 x 13 glass pan) with vanilla wafers, then bananas and 1/2 of the pudding mixture. Repeat the layer of wafers, bananas and the rest of the pudding mixture. I like to crumble some vanilla wafers on the tope to finish it off. Chill in refrigerator overnight.

BETTER THAN STARBUCKS LEMON LOAF
Ingredients
1ยฝ c. flour
1 (3.4 oz.) package, instant Lemon pudding mix
ยฝ tsp. baking powder
ยฝ tsp. baking soda
ยฝ tsp. salt
3 eggs
1 c. sugar
2 Tbsp. butter, softened
1 tsp. vanilla
2 tsp. lemon extract
โ…“ c. fresh lemon juice
ยฝ c. oil
ยพ c. plain Greek yogurt
zest of one lemon
Frosting:
3 Tbsp. Butter, soft but not melted
1ยฝ c. powdered sugar
3 Tbsp. lemon juice
1 tsp. lemon extract
Instructions
Preheat oven to 350 degrees. Line the bottom of a 5 x 9โ€ณ loaf pan with a piece of waxed paper. (With a pencil, trace the bottom of the pan on a piece of waxed paper and cut out with scissors.) Spray the pan, and waxed paper with non-stick baking spray. Set aside.
In a mixing bowl, combine the flour, pudding mix, baking powder, baking soda, and salt. With a stand or hand mixer, combine the eggs, sugar, butter, vanilla, lemon extract, lemon juice, oil and yogurt. Mix until evenly combined. Gradually add the dry ingredients to the wet, stopping to scrape down the sides of the bowl. Add the lemon zest, and mix until just combined. Pour the batter into the prepared loaf pan. Bake for 55 minutes, or until center is fully set, and a toothpick inserted comes out crumb free.
After baking, let cool in the pan for 5-10 minutes. Run a knife around the sides of the pan, invert and remove from the pan, removing the waxed paper from the bottom. Cool completely on a cooling rack.
For the frosting: Combine the butter, lemon juice and lemon extract with hand or stand mixer. Gradually add the powdered sugar, and beat until smooth and creamy. Evenly spread the frosting over the top of the loaf. Refrigerate to let frosting set completely before slicing. Refrigerate any leftovers in an airtight container.

Butterscotch Cake with Caramel Icing ๐Ÿ˜๐Ÿ˜

Ingredients :

2 Cups Brown Sugar

1/2 Cup Butter
1 teaspoon vanilla
2 Eggs
2 Cups Flour
1 teaspoon Baking Soda
1 teaspoon Baking Powder
1/2 teaspoon salt
1 Cup Buttermilk

Instructions :

Preheat oven to 350 degrees. Grease and flour (or line with parchment) two 9โ€ณ or three 6โ€ณ round pans.
Cream the butter and sugar with an electric mixer on medium until fluffy. Add vanilla, then add eggs one at a time, beating on low just until they are mixed in.
In a separate bowl, sift together the flour, baking soda, baking powder and salt. Starting with the flour mixture, add the flour and the buttermilk (alternating one then the other) into the sugar/egg mixture on low speed. When everything is mixed in, scrape down the bowl by hand.
Pour batter into the pans and bake for 25-30 minutes, until a toothpick inserted in the middle comes out clean.
Cool before frosting.

Caramel Icing:
1 1/2 cups Brown Sugar
1 Tablespoon flour
1/4 Cup butter (plus 2 tablespoons for later)
1/4 Cup Milk
1 teaspoon vanilla

In a small saucepan, mix together all ingredients except the vanilla and the extra 2 Tablespoons of butter. Heat over medium and bring to a boil. Stirring frequently to prevent burning, let the mixture boil for a good one minute. (I actually use a candy thermometer and let it reach 238 degrees, but if you donโ€™t have one, just make sure you boil it for a good solid minute). Butterscotch Cake Caramel Icing

Take off the fire and add in the vanilla and the 2 Tablespoons butter. Cool the mixture, occasionally giving it a vigorous stir, until it is still warm (but not HOT) and has thickened enough to spread. Spread it over the cake, moving fairly quickly because it will set as it cools. It will be a thin coating, not a thick layer. Let it set completely before cutting into the cake.
