Who else loves a bagel 🥯? I know our family is highly addicted to bagels! We’ve got one of the best bagel bakeries in our home town.

But we thought we’d try our hand at making bagels, but not your ordinary bagels - sourdough and sesame seed bagels! 👩‍🍳 We’d be lying if we said it was a smooth and easy process, trying to get the perfect balance between soft and chewy is an art. But we came close!

Sunday’s in our home looks like this; drinking lots of tea, eating a few too many of our sourdough rusks, and slowing down a bit.

Sunday feels. 🍃

Time for us to kick back and spend a slow Sunday in the kitchen experimenting with new ideas, and making some classic favorites. 👩‍🍳
Yesterday saw us experimenting with sourdough and vegan roosterkoeks, which turned out amazingly! So today we’re baking, bread, pizza and rusks for the family.

We love to cook in our hand build (built by dad), wood-fired oven. When we do, it’s a full day of cooking and baking. Yesterday we started building our levain and poolish for a day of baking. Today we’ll fire up the oven which will take a few hours to get to temperature, during that time we’re mixing, stretching, and folding, and bulk fermenting our bakes for the day.

Because our oven can say at temperature for a while, we try to make the most of our heat, but filling the deck with bread, then making pizza and lasting using the latent heat to cook and dry our sourdough rusks.

Baking this way is a full-day event, filled with lots of timers going off and checking oven temp ever so often. It’s one of the most rewarding feelings when we have a full harvest of sourdough goodies! 😁
