Sunday is , indulge a special mother figure with this delicious Carrot Cake. Made by you, with love and good intentions, she's sure to savour every bite. 🍰💕

For the cooled cake:
Wet ingredients:
4 room temp eggs
1 1/2 cups dark brown sugar
1 1/4 cups canola oil
Vanilla essence
1/3 cup amasi/buttermilk

Dry ingredients:
2 cups flour
3 teaspoons cinnamon
2 teaspoons allspice
1 teaspoon nutmeg
2 teaspoons baking powder
1 teaspoon bicarbonate of soda
Pinch of salt
1/2 cup coconut
1/2 cup nuts (optional)
1/2 cup raisins (optional)
3 cups grated carrot

Frosting:
125g margarine
1 tub plain cream cheese
1 teaspoon lemon zest and fresh squeezed juice
1 cup icing sugar

Method:
1. Mix wet ingredients together, ensure they’re all at room temp.
2. Sift in flour, spices, baking powder, bicarbonate & salt. Add coconut and mix gently.
3. ⁠Add nuts, raisins and carrot and gently fold with a spatula.4. Transfer batter to 3 x 6” pans or 2 x 8” pans and bake for 40-50 mins at 130 degrees or until skewer/toothpick comes out clean.

Frosting method:
1. Beat margarine with mixer until light and fluffy.
2. ⁠Add lemon juice and zest and beat for another minute.
3. ⁠Add cold cream cheese and beat until smooth.
4. ⁠sift in icing sugar and beat for another 2 minutes until everything is well combined.
5. ⁠spread or pipe over cooked cake layers as desired.
