What goes down, must go up…

Running a small business is not for the faint-hearted. Over the last several weeks, I’ve been running at a loss. People don’t realise what goes into producing something as humble as a pancake.

There’s wages. Gas (we sometimes go through 15kgs in a day). Flour. Responsibly sourced eggs. Salt. Vanilla essence. Baking powder. And some secret stuff 😉

Then, don’t get me started on the sugar. I buy 100kg’s at a time 😅. Cinnamon. Omg. There’s cinnamon, and then there’s cinnamon. The kind I chose for my customers isn’t the cheap type. I go through kg’s at a time. I mean, what’s a pancake without good cinnamon, and LOTS thereof. The card machine also gobbles up a big chunk. Grrr. Bank fees, too.

Lots of lemon 🍋 juice, serviettes, wet wipes (don’t ask), cleaning products to make sure we leave our spot cleaner than before we setup camp, fuel, paper plates, uniforms, water, and electricity bills, lastly; packaging.

Packaging costs almost as much as the batter! There’s the plastic domes, the stickers, the loyalty cards, vouchers, signage. Plastic bags, paper bags, fomos, cellophane, ribbons 🎀 .

And then there’s my time. I also like to get recompensed for that. Sometimes it’s 15 hours on my feet in just one day. I have calloused hands, burn scars a plenty.

And don’t get me started on wastage. Burned or broken pancakes do not make the cut. Day old pancakes, and leftover batter gets donated. We also give lots to hungry people who can’t afford food, and do what we can for various fundraising initiatives.

My point. And no, I’m not complaining.

Business is hard, and when you’re not making a profit, your mind takes you to lots of dark places, and it’s at that point that you have to keep your head.

Keep doing what worked in the past. Pivot or iterate where needed. Ask the hard questions. But sometimes, you’re doing absolutely nothing wrong. Times are tough. Don’t let’s get started on fuel prices.

Life sometimes works in spurts of inhales, and exhales.

This is when you pray, and keep moving forward. Consistency is key 🔑

So… grateful that we had a better week. My overdraft is really going to thank me!!!

A massive THANK YOU to everyone who made this possible. I literally will give you a kiss 💋 if you want one 😉. A holy kiss (Google it).

This thing only works because of YOU!!! So thanks 🙏🏻

Pancake Chronicles - 13th edition 🥞

For those of you who have followed our journey from day one, firstly, thank you for your love, and ongoing support.

As you know, there have been several iterations. We’ve changed our approach, our vision, and our purpose several times based on the evolving needs of our growing family.

Back in 2021, That Pancake Guy was a small pop up at Tea in The Trees 🌲 (Chintsa West). Mark and I started the business to help me earn extra money for Jesse’s school fees.

Then when Sam came back from a year’s worth of farming, and decided he’d like to farm abroad, we used the business to raise funds for him.

Turns out, he changed his mind, and decided not to go abroad. This was a very difficult decision at the time, but I believe that for him, it was wisdom. He’s autistic, and battles a lot with anxiety. As he got closer to his financial target, he had several breakdowns, and it was advised that he stay (perhaps pursue his dream in a few years time).

After a while, a local business offered him a job, and he accepted.

Then the business went into a partnership with Nyarie. Nyarie, and my middle son, ran the business. She focused on the Spargs customers, and he did external events.

During this time, I was really battling with my health, to the extent that I was medically boarded, so when Nyarie decided to move back to Zim, I once again took over the business (December 2025), and have been at the helm ever since. My middle son decided at the same time to focus on his career, so the timing was perfect.

To me it’s been an answer to prayer. I battle to cope in stressful environments, but baking for you, our much cherished customers has been such a blessing. I’ve made so many new friends, and I really look forward to seeing our regulars, and of course meeting new people is delightful.

Sam recently resigned, and has rejoined our crew, and my youngest, Jesse helps as well, then we have Ryan to help on busy days - a much valued part of our team.

To everyone who keeps us baking. Thank you. It’s much, much more than a humble pancake. It’s dignity, and independence.

As a single parent working with one income, financially things has always been a challenge, let alone dealing with health issues. So to all of you - thank you, thank you, thank you.

With so much love,

Cristin (& the team)

Ever wondered what happens at the end of a day when we have leftovers?

Our still fresh, and delicious pancakes are donated to Greensleeves Children's Trust‼️‼️

❤️👧🏽💛👶🏼🩷🧑🏻💙👱🏻‍♀️💚

If you’d like to add to this feeding project, eft any amount, and we’ll make sure that your donation is used to buy pancakes for the Greensleeves 🍃 kids, and or their feeding scheme.

A big thank you must also go to Spargs Superspar Beacon Bay for allowing us to sell from Entrance II

Pancakes are high in protein, lactose free, and are often accompanied by meat. Just last night the kids enjoyed mince on pancake! They loved it 🥰

Our 1981 Vespa mascot 🛵

I’ve learned that owning a vintage motorcycle means a lot of pushing, and kicking 😅

Today’s afternoon adventures included a gentle push up Old Transkei Road, followed by dozens of attempts to kick start and push start on Beach, and then when I just thought we might be able to drive home (Bonza Bay Road), she decided a nice stroll up Batting Hill in the heat would be so much more fun🥵
