Not all dark crusts are burnt... sometimes they're bursting with flavour. 🤎🍞

This batch spent a little longer in the oven and something wonderful happened.

A darker bake creates a completely different flavour experience.

As the crust caramelises further, natural sugars and proteins continue to react (the Maillard reaction), producing deeper, richer notes of toasted nuts, roasted coffee, dark caramel and even a hint of cocoa. The crust becomes thicker and more robust, giving that satisfying crackle when sliced, while the inside stays beautifully soft and moist.

It's a loaf with a little more attitude.

Some people love a lighter golden crust, while others seek out these bold, deeply baked loaves for their intense flavour and rustic character.

Every bake teaches me something new, and this one reminded me that sometimes what looks a little different can be absolutely delicious.

When sourdough teaches you a life lesson... 🥖❤️

Last Thursday was one of those days...

After shaping my loaves, I put the dough into the fridge, intending to leave it for an hour before switching the fridge on( I let the dough proof a bit longer in Winter) I would usually set a timer... but somehow, 7½ hours passed and I completely forgot! 🤦🏽‍♀️

At 11:30pm that night, it suddenly hit me... I never switched the fridge on!

I rushed to the kitchen, turned the temperature down to 1°C, and hoped for the best.

The next morning, the dough was definitely more proofed than usual—slightly puffy and even overflowing the bannetons! I knew I'd have to handle it gently. Instead of scoring deeply as I normally would, I made shallower cuts to help the loaves hold their shape.

And then... something unexpected happened.

They turned out to be one of my best bakes yet. Beautiful oven spring, incredible height, and a lovely crust. They were a little more tangy than usual, but absolutely delicious. 😋

It reminded me that not every sourdough bake follows the same path... and neither does life.

Sometimes things don't go according to plan. We make mistakes, forget things, or feel like we've messed everything up. Yet God has a beautiful way of redeeming what we place in His hands.

Every day I'm so grateful that I get to do what I love. Yes, there are stressful moments (more than I'd like to admit! 😅), but every challenge teaches me something. Every small adjustment, every lesson learned, every loaf baked is building towards something bigger.

Don't underestimate the power of showing up every day.

Keep working hard.
Keep making the small changes.
Keep learning.
Keep trusting God.
And keep using the gifts He's already placed in your hands.

Because one day you'll look back and realise that all those little faithful steps became the life you once only dreamed about. ❤️
