Tinned fish cakes Pilchards

The ingredients needed to make Tinned fish cakes:

Get 1 can tinned pilchards in tomato sauce
Prepare 1 medium sized onion
Prepare 50 g flour
Take 2 tablespoons salt
Get 1 tablespoon black pepper
Prepare 1/2 bunch fresh Italian parsley
Get 4 medium sized potatoes
Take 200 ml oil
Make ready 2 large eggs
Take 50 g baby spinach/lettuce for serving

Find recipes for crab cakes, salmon fishcakes, haddock fish cakes. Great with fresh fish, tinned fish and even leftover fish. There are many fish cake recipes to choose from including salmon, tuna or even catfish. You can make these easy fish cakes from any pre-cooked fish - tinned salmon or tuna or smoked mackerel.

Instructions to make Tinned fish cakes.

Roughly chop the parsley and add to a mixing bowl. Peel and cut the potatoes and boil until cooked. Set aside
Open the tin can remove and separate the fish from the tomato sauce (keep the sauce for later)
Remove the bone and inners from the fish and break into chunks and put in a mixing bowl
Chop the onion onto small pieces and add into the bowl
Add the salt and pepper to the bowl
Now add the eggs and potato and flour
Mix all the ingredients together but not too fast that it mashes the potato
Roll into balls with your hands (yes it's messy) put in the oil and fry for about 2 minutes constantly turning them
Remove put on a paper towel to soak excess oil
Use the tomato sauce from before as a dipping sauce by chopping more parsley into it and serving on a bed of baby spinach or lettuce.

Pilchards from a tin, with a few Indian spices to create a really quick, nutritious yet cheap meal - really delicious!

Ingredients

2 x 425g tin of pilchard in tomato sauce
1 tbsp oil
1 onion, sliced
½ tsp carom seeds
2 cloves of garlic, sliced
2 tsp ginger, grated
1 chilli, chopped
1 tsp salt
1 tsp turmeric
1 tsp dried fenugreek leaves (kasoori methi)
Handful of fresh coriander, chopped

Method

Heat oil in a pan and add carom seeds. When the carom seeds start to sizzle add the sliced onion and garlic then fry until lightly brown.
Reduce the heat and add ginger, chilli, turmeric, salt, fenugreek and fry until aromatic (about 5 mins). If the spices stick just add a dash of water to loosen.
Open the tin of pilchards and pour in the tomato juice keeping the fish behind.
Cook everything to create a thick masala paste which becomes nice and shiny.
Gently place the fish into the masala and heat. Be careful not to stir as you don't want the fish to break up. If it looks a little dry, add some hot water.
Remove from the heat and add garam masala and a good pinch of coriander to serve.

This brings back so many memories of childhood for me. We all loved this fish curry but it's only recently I realized that mum would cook this when times were hard and money was tight. It's a great dish because you don't even have to add tomatoes, they are already in the sauce. All it needs is a few choice spices to bring it to life - simple, quick, nutritious and a really cheap meal that's packed full of goodness and flavor.
