Bakery behind the scenes!

Did you know that if you have a strong healthy starter, dough will rest in the fridge for up to a few days! 😳 And still have a beautiful bake?!?

Why is this useful?

1. The customer gets truly fresh baked bread when THEY want it.

2. Better flavor! The cold fermentation in the fridge develops that depth of sourdough flavor! 😋

3. I can make MORE! If I can spread out when I do wet dough work, I can get more bread out each week. That's a win-win!!
