I love making these cute little rosettes cakes, and adding eatable glitter is always fun, though my first attempt at the name in all glitter went slightly awry when the eatable glue started to melt the fondant letters, so I compromised with myself and just added it to the front. Otherwise, this cake was all fun for me 😁😁😁

To all the bakers that follow me, have you ever had a cake that seems to be going perfectly smooth and then suddenly everything seems to go up in smoke…?
That was this cake for me…
It started with me baking the wrong size cakes, but thankfully the recipient didn’t mind the extra cake at no extra cost… though the real panic started when I laid out the pre-made decorations the morning of delivery, when I found little teeth marks and missing bits courtesy of my 9yo niece who had been staying with me a few days before (I’m not even sure how she got to them). I had to remake the star and microphone, and the music notes were nowhere to be found. After I quickly whipped them up, I got to applying the rest of the decorations to the cake, only to have my cute little wickets crumble as I tried to press them into the top, toothpick substitution was made and at that moment I was incredibly thankful that the delivery had been moved back by an hour. Still, I had the car loaded and was out the door at 5:10 for my 6:00 delivery, thinking 50 minutes for my 23 minute drive would allow me to ring the doorbell on the dot, but I got caught up in a traffic jam caused by an accident making my 23 minute drive became almost 2 hours, and my delivery 50 minutes later than requested.
Moral of the story, if things are going too smoothly, Murphys Law will take hold 😓😓😓

I love the fresh berries and bright flowers on this cake. So vibrant, and so decadent, chocolate mud cake with raspberry coulis and dark chocolate ganache filling/frosting.

First oversized cookies I’ve made, and there were some touchups after these pictures were taken, but I’m pretty happy with how they turned out 😁😁😁

This was fun, I made poké balls using Lindt balls and coloured chocolate, and cookies with printed images and royal icing.

Here at Cakes by Gabby, we specialise in custom, completely eatable, family made cakes the way my Grandma used to make them, with a little bit of help from new technology, like my beloved stand mixers.
It’s all kept in the family, my niece is my kitchen assistant, my brother makes deliveries and my mum organises the order schedule and helps with general inquiries. We laugh together at our failed attempts at new things, celebrate the triumphs, like the macarons above, and experiment with new (or new to us) recipes.
When we are trying new things, or get a request for something new, the first stop in the recipe hunt isn’t google or one of the many sites that are out there, it the bookshelf in the kitchen and Granny’s recipe cards. Her hand written collection of cakes, biscuits, slices, and everything else you can think of, that she made and experimented with in her amazing 89 years. Her lighter than air sponge cakes in every flavour you can think of were always a family favourite, the corn flake cookies that throw us back to our childhoods with their cinnamon spiciness and raisin sweetness, or the mouthwatering smell of her pies as they baked... All of that and the amazing, breathtaking wonders of the wedding and birthday cakes that she used to make by hand.
All of these things are what we are striving for in her absence, and we hope that we can share them with all of you.
