Executive Chef Orlando León came to the United States from Bogota, Colombia, at the age of 16. Soon after his arrival, he began working as a Garde Mangé of the renowned River Café. While still in college, he continued to work in the kitchens of a several well-known chefs including Larry Forgione and Jonathan Waxman. He also served as Executive Sous Chef and Pastry Chef at Metropolis Café. In 1997, along with his wife Stacey, he opened his own Latin Café and Catering Company, MOSAICO food of the Americas, and in 2005, he became the Executive Chef at the Benjamin Hotel.
Throughout his culinary career Chef León’s love for the pastry arts inspired him to create unique, sumptuous desserts and baked goods, but his calling as a Cake Artist all began with his daughter Tallulah’s birthday. In 2009, when he asked Tallulah what type of cake she wanted for her 6th birthday party, she requested a Butterfly Cake. Calling on his 20 years of experience in baking, Chef León created a stunning and delicious cake covered with elegant, colorful sugar butterflies. Not only did Tallulah’s eyes light-up when it was presented, but guests at the party raved over the cake’s exceptional design, the detailed workmanship and the delicious taste. Soon, requests were coming in from friends and guests for Chef Leon to create one-of-a-kind cakes for their special celebrations. Butterfly Bakeshop was born and the elegant butterfly confection became its signature, now found on every cake that the bakeshop produces.
