Hi everyone! As most of you know I injured my knee quite badly. As it turns out , my meniscus is severely torn. ( A 'bucket handle' meniscus tear - if you are familiar with these types of things).

Amazingly, my surgery is scheduled for next Friday! I am beyond thankful. My surgeon is fabulous and has scheduled me in as soon as he possibly could.

Baking isn't always a physically gentle career haha. This will now be my 4th knee surgery in less than 10 years. Recovery should be fairly smooth.. but it really depends on the extent of the damage and what needs to be done once he gets in there.

I have done up a schedule for the next few weeks (to the best of my ability). It's hard to say how much time I will have to take off. As a self employed single mama it is a little nerve racking. Ideally, we will be back to the markets for the 16th - even if it's with items that are less physically demanding to produce, or items that have a longer shelf life. If you have any ideas I would love to hear them!

Thank you all so much for your support as I work through this. It means the world ❤️

Why Mixing Matters in Gluten-Free Baking

One of the biggest myths about gluten-free baking is that mixing time doesn't matter since there’s no gluten to overwork… but that’s not quite true! While we don’t rely on gluten for structure, overmixing can still affect other important ingredients. For example, xanthan gum helps bind our doughs and batters, but if overworked, it can lead to dense, gummy results. Similarly, starches like tapioca or potato starch are crucial for adding lightness and volume—overmixing can break them down and prevent your goodies from rising properly.

In delicate recipes like pastry dough, mixing too much can incorporate excess air, causing it to lose its structure. And when blending in butter for doughs, you need a light touch—overmixing can result in a tough texture, instead of those flaky layers we all crave.

Whether it’s scones, cupcakes, or a buttery pie crust, gentle mixing is key to making your gluten-free treats as tender and delicious as possible.
