3 baking mistakes beginners don’t even know they’re making
And today, we’re talking about those small mistakes that look harmless… but can quietly ruin your cake game.
Customers may not notice these things, but you as a baker? You should know better.
Now let’s break it down.
Mistake 1: Guessing measurements instead of being precise
“I’ll just eyeball it” — this right here is where plenty problems start.
Baking is not cooking.
You can’t just pour flour or sugar based on vibes 😭
Too much flour = dry, hard cake
Too much liquid = soggy, weak structure
A good cake is built on balance. And that balance comes from accurate measurements.
So if you’re still guessing… that cake is also guessing how it wants to turn out.

Mistake 2: Overmixing your batter
A lot of beginners think: “The more I mix, the better it becomes.”
Nope.
Overmixing develops too much gluten, and what do you get?
A dense, tight, almost bread-like cake 😩
Instead of soft and tender, your cake becomes strong-headed.
Once your ingredients are combined, stop mixing.
Let your batter breathe small 😌

Mistake 3: Opening the oven too early
This one ehn… it’s very tempting 😂
You just want to “check” how your cake is doing.
But that small check can collapse your whole effort.
When you open the oven too early, heat escapes, and your cake can sink in the middle.
That beautiful rise you were expecting? Gone.
Patience is part of baking.
Let your cake set properly before disturbing it.

Which one have you been guilty of? Be honest with me.
And if this helped you, don’t keep it to yourself — share it with another baker who needs to see this 💚
