Happy Monday! Homemade protein bar recipe my treat on this Monday, excited to have these on hand for my kiddos this week. I feel like we never half enough snacks so I adapted this recipe to pack the protein from a recipe!
Ingredients:
•90g GF Oats
•144g Raw Cashews
•32g Protein powder of choice (I love collagen or pea protein)
•13g Brown Sugar (Can sub for coconut sugar to cut calories)
•1/2 tsp salt
•38g Coconut oil
•42g Honey
•1.5 tsp Vanilla
• 30g Chocolate chips (or more for taste)
•Flaky salt to top
Toast Oats at 350F for almost 10 minutes, start to lightly brown. Add oats with cashews, protein powder, cashews, sugar, and salt to food processor. Pulse until fine, add coconut oil, honey, and vanilla, blend until dough forms. Line a loaf pan with parchment paper and press mixture into the bottom. Top with chocolate and flaky salt, then chill for 30minutes minimum. Keep in the fridge for up to 2 weeks. Feel free to add your own mix ins and sub the honey for maple syrup to make it vegan.
