In addition to running my bakery I also have a full time job and two little boys who are five and two. Things get a little wild over here sometimes. One of the things that keeps me on track and helps to manage the chaos is what I call prebatching. I prep, weigh, and bag my dry ingredients ahead of time. I do the same thing with the eggs when I know I’m baking in bulk. The prep work is really what carries everything. This morning I prepped 6 sugar cookie batches and made a fresh batch of brown sugar because I know the next three weeks are going to be VERY busy for us, and I need it to go smoothly.
