‼️ COTTAGE LAW ‼️ MENU CHANGE ‼️
After 2 weeks of emails, phone calls, rereading the Arkansas Homemade Food production guidelines OVER & OVER…
I FINALLY got some clarification…
THERE are TYPO’s (YES, “TYPO”!!!!) in the Arkansas Homemade Food production guidelines. That was the exact term used.
I am 100000% committed to being compliant, and 100000% believe I have been compliant to the guidelines as it’s written currently.
There is no expected date for a published revision.
I understand their reasons for the change, but do not understand why the ADH is pursuing this change the way they have been.
To me, it has been unclear and unprofessional. Many of us cottage bakers take our jobs very seriously.
BUT! There is a way forward!!!!!!!!!
I am pursuing recipe testing and product sampling to determine if my foods containing fresh inclusions such as cheese, jalapeños, garlic etc are safe to eat.
I am doing them one at a time, as it’s an expensive process and each recipe has to be tested and pass the testing in order to be able to continue selling.
But if I’m honest, I’m a little uneasy, since recipe testing and sampling is NOWHERE in the homemade food production guidelines. And there have been “typos”.
Who’s to say the ADH’s mind isn’t changed after I spend all this money and time getting my inclusion recipes tested?
BUT GOD is sovereign. Jesus is risen. And it’s all just bread! 🥯
