I never imagined I would have a “cheesecake” business but after nearly seven years of giving away cheesecakes, I have been encouraged to begin selling them to interested lovers of this tasty treat. It has and continues to be a work-in-progress as friends, relatives, and current customers request cheesecakes for special events. I have made these for several local businesses in Winter Haven as wel
l as custom orders for a number of different people. All cheesecakes sold to individual consumers are produced in accordance with the Florida Cottage Food Act and are not subject to Florida’s Food Safety Regulations. All cheesecakes include a list of ingredients. Cheesecakes sold to commercial businesses will be produced and baked in a commercial kitchen that is regulated by Florida’s Food Safety Regulations. By September, all cheesecakes will be officially available for retail purchase as they will be assembled and baked in a commercial oven in an approved restaurant facility. The cost to make each one varies for each one depending on the ingredients (especially the fresh fruit and the season). As a point of reference, the average market cost of custom cheesecakes ranges from $40-$55. My cheesecakes range from $30-$35 depending on ingredients. Cheesecakes that include fresh berries and macadamia nuts are the most expensive regardless of the time of year. If you would like to order a gourmet cheesecake, please contact me at least a week in advance. The cheesecakes must be made 24 hours in advance of any event due to baking, chilling, presentation, and delivery time requirements. All cheesecakes are delivered on commercial disposable cardboard cake trays unless otherwise requested. Glass trays are available with a $10 deposit (replacement cost). All standard cheesecakes are 9 inches in diameter and contain both bottom and side crusts. All prices listed below are calculated for standard size cheesecakes
4-inch “Cheesecakes for Two” are also available. This smaller size contains both bottom and side crusts. The price for these cheesecakes is the standard 9 inch price plus $10.00 for the additional preparation and presentation time required. Assortments can be prepared with the price negotiated at the time of the order.
2.75 inch mini-cheesecakes are also available. This size is baked in a paper cupcake cup and contains only a bottom crust. A minimum order is 24. The price for these mini-cheesecakes is the standard 9-inch price plus $15.00 due to the additional preparation and presentation time required. Mini-cheesecake assortments are also available in minimum orders of 24. Assortment prices are based on the average price of the standard 9 inch cheesecake plus $15.00. Mini cheesecakes are delivered on 12 inch commercial disposable cardboard cake trays at no extra cost. Other multi-tiered display trays are available with an additional deposit of $15.00. Assortments of 24 can be ordered in the following combinations:
Two Flavors (12 mini cheesecakes each)
Three Flavors (8 mini cheesecakes each)
Four Flavors (6 mini cheesecakes each)
Six Flavors (4 mini cheesecakes each)

Freezing
Most cheesecakes can be frozen without fresh fruit topping. Food Allergies and Sensitivities
ALL cheesecakes are gluten-free unless specific ingredients requested make this impossible
Nuts are only used when requested and can be added or eliminated from any creation. For nut or peanut allergy customers: All pans are sterilized between use to eliminate cross contamination. Fresh raspberries and blueberries used for decoration/garnish only available in season. Other fruits (peaches, mango, apple, blackberry, lime, lemon, key-lime, etc) can also be used. Please check with me for availability and recipe modifications. All cheesecakes contain cornstarch. It is not possible to make “vegan” or “dairy-free” cheesecakes due
to the ingredients needed to create the base and crust recipes. Specific ingredients depending on cheesecake flavor available upon request (allergies and sensitivities can be accommodated in most recipes. See specific ingredients for each flavor listed above.
