My mom LOVES lemons, and for her birthday party this year I decided to create a cake based on one of my favorite classic lemon desserts of all time: the lemon bar.

Orange Spiced Cake: orange spiced sponge with a cardamom soak, vanilla cream cheese frosting, hidden gingerbread cookie crumbles for extra texture/surprise

Smash cake:
Low sugar sponge made with applesauce/banana purée, cream cheese and freeze dried strawberry frosting sweetened with maple syrup for a tasty treat 🧡🧡🧡
