This snowy day is the perfect time to share my 3 bean chili recipe.
Ingredients:
-1 onion it doesn’t matter what kind- diced into small pieces
- 1 pepper- could be any color- diced into small pieces
- 3 or 4 cloves of garlic- minced or cut very small
- jalapeño (optional)- diced small
- 1 15oz can of tomato sauce(not seasoned)
- 1 can of black beans- drained and rinsed
- 1 can of cannellini beans- drained and rinsed
- 1 can of refried beans- I use a vegetarian one so my chili is safe for vegans
- 1 tsp cumin- you can always use more or less
- .5 tsp of cayenne - again more or less to your taste
- salt and pepper to taste. Make sure you add salt. Seasoning your food is really important to highlight the flavors. Or if you enjoy bland food that taste like canned items have at it.

Sauté the onion until translucent then add the peppers and garlic. Cook for a few minutes until tender. Add all the beans and tomato sauce. If it is too thick you can add some water by cleaning out the tomato sauce can. Don’t add too much though since it’s not soup.
Add your seasonings and cook for 30-40 minutes. Always taste to make sure it’s seasoned well.

You can make this a day before serving or make a bunch for several days. Serve with your favorite tortilla chips and cheese if you wish!

I’m trying to start a new thing weekly by sharing a recipe. Having celiac disease and being a vegetarian- dinners get tricky. We never go out since I do not feel safe due to cross contamination- so I make every single meal. Some days are harder to come up with something new and exciting- other days I just stick to the basics. Hopefully these recipes will help some of you who are in the same boat as me.
Starting with a simple meal, but a classic - Grilled Cheese!

- start with your favorite gluten free bread- I use my farm bread (which you can always order😉)
- use your favorite cheeses. 3 different cheese are always a suggestion- I stick to the local ones thanks to and for their yummy cheeses!
- butter is key. Use enough to cover both sides of the bread. I put about 1 TBSP in a frying pan that is over low heat. With grilled cheese low and slow is better as to not burn the butter.
-it helps to put a lid on the pan to contain the heat and melt the cheese better
- flip the sandwich over after a few minutes and continue cooking until the cheese has melted.
- don’t leave the sandwich in the pan too long after you turn the heat off or it will get soggy
- enjoy with pickles and chips!

Bruclin has come a long way. She was our little goat that broke her leg July 4th weekend. After an intense surgery and lots of healing- she can finally put weight on it and is loving be with all her siblings (except Brick) and living like a normal goat. We love her so much!

Happy New Year to everyone! It’s been quite a year. Normally I would do a blog, but our website has changed and we haven’t quite figured out how to add those yet- so here we go.

It’s been a hectic year with lots of ups and downs. I believe with more ups though which is always a win. The bakery has grown thanks to being able to be a part of the in Belfast and the . The farm has also grown and not just in animal quantities. Although we have a bit more ducks than planned thanks to Miss Delphi! Coloring with goats was a success this past summer and I hope the goats were able to bring a lot of smiles to faces.

We had to deal with a lot of injuries and vet bills this year though and a lot of bad hand days for me. It has been hard just being myself and my husband when he can. Our future goals are to have help so we can do even more!

This coming year I have lots of plans- if I can do them is another question, but here’s hoping. More events, more baking, and hopefully adding different kinds of classes. Stay posted for these things!

Running a small business it’s especially hard and trying to make the best gluten free products that I can and still trying to keep items affordable to everyone. All the while growing the farm with all of our amazing animals, as well with dealing with physical and mental pain.

I enjoy baking of course. Most of my efforts and love is for my animals at this point though. We have goats, ducks, chickens, and dogs.
I produce delicious gluten free baked goods. I have super high standards so I feel my products are above what else may be out there. I’m most known for my bagels and doughnuts😊
Farmers' markets are important because they are definitely my income. We have a farmstand but it’s in a small town, so we have to go to where the people are. It’s definitely a great networking aspect as well. It is also the only time I socialize with actual people!”

I've been searching for great tasting, easy to work with Gluten Free sub rolls. The ones we presently use are from Udis and just don't cut it in my book. I finally found a bakery that was willing to make them for us and most importantly we didn't have to raise the GF extra price!!! Today we took a drive to Windsor to pick up the rolls. They will be available tomorrow. I also grabbed bagels for breakfast sandwiches, plain and everything. Please call ahead because those will be frozen..
