Threw this together when I failed to plan dinner and it was so unbelievably delicious 🎉
•Chopped a head of cauliflower and a zucchini. Drained a can of chickpeas. Shook a bunch of turmeric over them all and roasted at 400F until they seemed done. (So precise, I know!)
•Meanwhile, tossed basil, spinach leaves, pine nuts, nutritional yeast, raw garlic, salt, lemon juice, and water into the food processor and turned it into pesto.
•Microwaved leftover white rice then tossed everything else on top. Delish!

This Vegan Chocolate Chip Pumpkin Bread is everything: cozy and comforting, lightly sweet, filled with pumpkin spice, and made from wholesome ingredients.
With the exception of the chocolate chips, this recipe has 🚫 white flour, 🚫 white sugar, 🚫 oil. If you sub the chocolate chips for pecans or walnuts you have a completely oil free, cane sugar free, flavor-packed, moist and tender pumpkin bread made with whole grain flour. It’s been kid- and friend-tested and gets 👍🏼👍🏼.

I’ve used whole wheat pastry flour, coconut sugar and coconut yogurt to keep it free from white flour, vegetable oils, or cane sugar (with the exception of the chocolate chips). I think you’ll be impressed! It’s got alllll the pumpkin spice flavors dotted with magical little kisses of chocolate. So good 😋🍂🎃

Who’s ready for some football? It’s opening week for the NFL and I know what we’ll be having - this warm and comforting Vegan Chili Macaroni! It cooks in just one pot with no need to cook the noodles separately and is ready is just about 30 minutes. Make a big pot, then put out little bowls of toppings for people to customize theirs: shredded cheese, lime, jalapeños, cilantro, sour cream, etc. It is crowd friendly and can easily be made gluten free.

It’s been a while but I’m still here! I’m working on getting this blog up and running (it’s so much more work than anticipated), plus writing new recipes and studying/practicing food photography. Sushi bowls are my current favorite fast dinner. Changed it up a little this time by roasting some pineapple chunks alongside the tofu, and topping the bowl with some vegan kimchi that I found . This stuff is SO GOOD and is a great complement to the other ingredients in the bowl. Sticky sushi rice, roasted tofu & pineapple, cucumbers, carrots, kimchi, and a light dressing made from soy sauce, rice vinegar, ginger and maple syrup. Mmmm!

I’ve said it before and I’ll say it again: fiber, fiber, fiber! Chances are high you aren’t getting nearly enough, and everything from digestion to gut health (which plays a huge role in both your immunity and your mental health) depends on fiber! Stop counting protein already. You want to improve your health? Track your fiber intake for a week and you’ll probably be shocked. Most Americans only get about half the recommended intake.

Surprising that there’s so much fuss about protein in the US when less than 3% of adults don’t make the cut—presumably folks on extreme calorie-restricted diets who just aren’t eating enough food, period. But 97% of Americans get enough protein. Even those eating plant-based diets get enough protein, averaging about twice the estimated average daily protein requirement. There is a nutrient, though, for which 97% of Americans are deficient. Less than 3% of Americans get even the recommended minimum adequate intake of fiber. Beans, as well as other whole plant-based foods, such as whole grains and nuts/ seeds, are excellent ways to get both protein and fiber!

Beans/ Legumes, one of the Daily Dozen categories, are both a great source of protein and fiber! Here are some examples:
1 cup cooked lentils: 18g protein, 16g fiber
1 cup cooked chickpeas: 15g protein, 13g fiber
1 cup cooked black beans: 15g protein, 15g fiber
1 cup of cooked split peas: 16g protein, 16g fiber

Whole grains, another Daily Dozen category, also provide protein and fiber, but not nearly the amount that beans and legumes provide.
1 cup cooked quinoa: 8g protein, 5g fiber
1 cup cooked oatmeal (regular): 5g protein, 4g fiber
1 cup cooked millet: 6g protein, 2g fiber

Nuts/ seeds contribute to protein and fiber intake too:
1 oz almonds: 6g protein, 4g fiber
1 oz cashews: 5g protein, 1g fiber
1 TBSP almond butter: 3g protein, 2g fiber
1 TBSP tahini: 3g protein, 1g fiber
1 oz chia seeds: 5g protein, 10g fiber

And even veggies can contribute to protein intake too:
1 cup raw broccoli: 3g protein, 2g fiber
1 cup raw brussel sprouts: 3g protein, 3g fiber

Have you ever made your own oil-free tortilla chips? It’s so easy! Simply cut tortillas of your choice (I use Trader Joe’s corn tortillas because of their super short ingredient list) and place on a baking sheet. Bake on a single layer at 350F for about 12-15 minutes, turning once. Mine went all curly and cute and I’m not sad about it 💁🏼‍♀️ Shown here over a hearty breakfast tofu scramble packed with tender golden potatoes, black beans, and salsa.

It’s been a crazy few weeks! I’m hard at work behind the scenes building out a brand spanking new website so I can start bringing all of my ideas to life. But it’s a lot, like A LOT, of work. In the meantime, I’m keeping myself (and my family) fed by continuing my Sunday habit of prepping meal components. This works better for me than having full meals done ahead of time because I can add to these components throughout the week to keep things feeling fresh, and not like I’m just eating leftovers all week.
🥬Here I have:
•Cut watermelon
•Cooked brown rice
•Cashew cheese sauce
•Baked tofu with miso glaze
•Peanut butter-oat energy balls
•“Sienna soup” (a yellow split pea based blend of a dozen veggies, beans, and spices)
•Lentil salad
•Chopped red pepper and purple cabbage

Quesadillas are delicious but most tortillas, refried beans, and non dairy cheeses are full of unhealthy oils which we should all try to minimize. Here is where paying attention to ingredients makes a big difference in overall meal quality.

My recommendation for a whole foods-based, oil-free tortilla is Ezekiel brand (found in the frozen food section), and for a cheeze sauce I like Good Food brand’s Queso Blanco. It’s available at Target and is made from recognizable, clean ingredients with no added vegetable oils. Fat free refried beans are clearly labeled on the canned foods shelf, just look for only beans and spices as the ingredients.

Here I have sautéed peppers, onions, and garlic plus refried pinto beans, and a spoonful or two of the queso blanco between two tortillas and it’s topped with chopped lettuce, salsa, and avocado.

Im adding pics of the Queso Blanco packaging because I feel like it’s a hidden gem! Even the smaller Targets usually have it. It’s in the produce cooler above the tofu. It’s also excellent over a baked potato 😋

Baby mixed greens, sliced scallion, parsley and mint with avocado and lemon dressing. Roasted gold potato wedges tossed in nutritional yeast, onion powder, garlic powder, paprika, salt and pepper.

Full of greens, healthy fat from a whole food, complex carbs, plus citrus to help the body absorb iron from the greens. 💪🏼 Parsley and mint are rich in antioxidants and several vitamins and minerals and are a fun and tasty way to boost the nutritional value of any meal.

Lentils are loaded with protein, fiber, iron, potassium, and folate. They are a heart-healthy food and support gut health, which plays a role in everything from your mood to your immune system function. All important stuff! Sour cream & onion roasted chickpeas. How? Toss cooked, rinsed chickpeas with onion powder, garlic powder and dill. Bake at 400F until desired crispness, about 20-25 minutes. Remove from oven and toss with a splash of white vinegar and salt to taste. So good!
