I think every sourdough baker can say that scoring your bread is probably the best part.

If you’re ever wondering why our sourdough bread loaves aren’t in the traditional boule(round) or batard(oval) shapes, it is because we almost always use the double pan method pictured below. In this method, you place your loaf in a tin pan and cover with another tin pan for baking. This method not only gives the bread a crust and shape that is easier to cut into slices, but it also allows us to be able to bake 10 loaves at a time in our home oven! When using cast iron dutch ovens, we can only bake two at a time in our oven. 10 vs 2…it’s a no brainer when baking in bulk! BUT, I can assure you our loaves are still 100% artisan sourdough!
