I know the calendar technically still says August, but the first pumpkin order of the season has officially gone out, so I’m calling it: we’ve suffered through enough summer. Pumpkin season starts now. 🖤

These Pumpkin Pie Cheesecake Bites are everything I want this time of year - creamy pumpkin cheesecake with all those warm pumpkin pie spices, topped with fresh whipped cream and a little extra dusting of spice.

Basically, pumpkin pie and cheesecake made a tiny, dangerously snackable baby.

Lemon and black currant might not be the most obvious pairing, but apparently they were waiting for each other.

Bright, tart lemon cheesecake swirled with rich black currant preserves, then dressed up with fresh whipped cream, lemon wedges, and a deep black currant drizzle.

She’s sweet. She’s tart. She’s a little dramatic. And honestly, I think the dark, almost moody black currant against all that bright lemon is my favorite part. 🕯️✨

Sometimes the best flavors start with a little curiosity and just enough temptation to see where it goes.

Over the past year, I've had more than a few people ask if I make cheesecake bites. So, to officially put that question to rest...

Yes. I do. 🖤

After another recent request, I figured it was finally time to make a couple batches, test a few new recipes, and show you exactly what my cheesecake bites look like.

🤎 Dulce de Leche - brown sugar and dulce de leche cheesecake topped with fresh whipped cream and a rich dulce drizzle.

🍒 Cherry Amaretto - almond and Disaronno-infused cheesecake topped with cherry pie filling. A few are pictured with Amaretto pipettes, but because of cottage food regulations, I can't sell them pre-filled with alcohol. If you'd like to add that little extra magic at home, I can absolutely provide pipettes for you to fill yourself. ✨

You’ve seen her in minis, but here she is in her full-sized glory: Strawberry Shortcake Cheesecake. 🍓🍰 Creamy strawberry cheesecake, piled high with fresh strawberries and finished with clouds of whipped cream.

This lovely lady has already been rehomed for an office birthday party, where I hope she causes at least a minor workplace distraction. 🎂✨

Some recipes come together. And some arrive fully formed.

Amaretto-steeped plums, slow-simmered with their own syrup and browned butter until they turn soft, dark, and impossibly luxurious. Set atop a brown sugar cheesecake infused with almond, warm and velvety without ever feeling heavy.

Finished with a whisper of pecan for just enough texture to keep the bite interesting.

It’s rich. It’s soft. It lingers.
