New test kitchen flavor. Lemon poppy seed sourdough. I paired this with some lemon honey butter I made. Let’s just say 90% of my calories the past two days have been from this bread and butter combo! So good? What should I try next???

How to tell if your dough is done bulk fermenting... One of my biggest challenges when I first started learning sourdough is reading the dough. It’s so different than yeast dough! I read about temping your dough, about measuring its rise. Really, what has made the biggest difference for me, is the Jello test. When it’s got bubbles, jiggles like Jello, pulls away from the sides easily, those are the cues I look for that my dough is ready for processing to cold ferment in the fridge! If anybody finds sourdough dough reading confusing, hopefully this tip can help! Happy baking!
