Manilena Cakes I have finally found out what my passion is. I love baking cakes, cupcakes and cookies and decorating them.

Working with my hands and creating wonderful goodies that people will love, seeing the smile on their faces, the amazement in their eyes - this is what makes me happy. So I claim to the universe, I will have my own successful baking business very soon. Successful enough to leave the rat race they call the corporate world and surround myself with the food that I love to create.

I have been doing her and her brother and sisters' cakes all throughout the years. I might've missed a few events here and there when I decided to take a hiatus. But I've always enjoyed making their cakes.

And now Lindsey is 13. Her past cake choices have always been so apt with her age - dora, hello kitty, unicorn. And this last one came from a funny frog trend in tiktok and instagram - she's definitely a teener now. (I had to make her frog cake topper via a cake pop technique.)

Her cake was made from vanilla chiffon. It is filled with real sliced strawberries and jam. The cake was covered in bridal blend-flavored swiss meringue buttercream. Her cupcakes were chocolate and ube swirled with the same buttercream flavor.

A better picture of my bibingka order. I had an order for 3 bibingka cakes that my client was supposed to bring out of state. Sadly, the restrictions and guidelines on what to do once you came back to MD made the travel a little burdensome. But who's complaining about having bibingka to eat anyway, if it's prepared like this and tasted divine?

And here it is - with all the toppings on it - butter, cream cheese, home-made salted eggs and dessicated sweetened coconut. Mind you, the bibingka has salted eggs and cream cheese already inside. So, this is THE ultimate!

It is wrapped and boxed up when you pick it up. The bread is so soft and yummy! It feels like having bibingka back home on a christmas night.

Ah, summer! The most difficult time to make cakes because, you know... the scorching heat and buttercream? They don't always play well together.

But I still try. It's a good thing my italian buttercream is stable despite the hot summer days - even for a party done outdoors.

And last week was a friend's 60th birthday and her decor theme was hawaiian. So here is a cake of ube and pandan layers together with iced with ube in one tier and pandan on the smallest tier with macapuno slithers in-between. The bottom tier is a mocha cake with coffee-caramel buttercream in it.

Except for the gold letters on the top, the happy birthday and the celebrant's name, all these are edible. How about that?

Nika is our friend, Juanita's, daughter and Andy's mom. I hit it off really well with Nika because she has the same sense of humor that I do - which is the very shallow kind. :)

I wanted to give her something special for her birthday and what other way for me to do it than with cupcakes... with buttercream flowers. Just like a bouquet, but you can eat these.

Its the 2nd birthday of my godchildren, Zyler and Zita, and this time their mom and dad did their party at Clark's Elioak Farm. It was a fun party with so much to do and see and eat, despite the rain :). The kids were happy to be able to run around the farm, go on a hayride, visit the petting stable when the rain decided to give way to the sun.

The cupcakes were Black Forest Chocolate with cherry filling and vanilla buttercream while their cake was a Cream Cheese Pound cake with vanilla buttercream. Soooo good!! I kid you not!

The royal prince and princess of Mark and Ana celebrated their first birthday and what better cake is there than a castle cake? I made this as a birthday gift to the twins, with Zita being my god daughter too.

This is a little painful because I was still learning the rudiments of gravity cakes and altho the cake won't topple over, I didn't anticipate the weight of the cake on the right side of the platform. (Now I know better).

Thank you, Mark and Ana Clarice for the patience with the cake. We'll do soooo much better on their 2nd birthday, which by the way is coming soon :)

I was introduced to one of the greatest deities of the caking world, international artist Ceri Griffiths, by my award-winning cake decorator friend (who has always been a big influence in my cake persona), Joanne Weineke, at OSSAS about 2 years ago. I was awed by his down-to-earth personality, despite his big name in the industry. He recently introduced his Creative Cake System moulds in association with Katy Sue Designs and it is amazing! When my friend saw my cake, she really thought it was piped. That's how good the moulds are!

I sent Ceri a message showing him what I did with his products and he posted them on his pinterest! I am thrilled and went to cake heaven! Thank you, Ceri. i am so honored!

The 50th wedding anniversary of our beloved Tito Ted and Tita Lita. I love this couple heaps that doing their cake and cupcakes was simply a happy place for me. Tita Lita wanted the simplicity of the flowers on her 2nd and 3rd tier. Their initials and the 4th tier design I patterned after their wedding invitation. Her and her entourage's bouquets were roses and hydrangeas so fitting that I should also do the same for her cake and cupcakes.

They had lemon blueberry with lemon Italian meringue buttercream (IMBC) for their 1st and 2nd tier. The third tier was mocha marvelous with mocha IMBC and their cupcakes were strawberries and cream cheese with strawberry IMBC.

Many more anniversaries to come, Tita Lita and Tito Ted!

Taken last October 2016, also in Calgary. We celebrated my niece's 3rd birthday. Since her birthday was nearing halloween, we decided on a superhero-costume party.

I made the cake and cupcakes. I was able to use my mom's edible sheet printer and I enjoyed printing the little superhero kiddies that were also in her digital invite. You can see them on the cupcake toppers and the side of the cake. I'm starting to like this edible printing thing... might be getting onefor my birthday *wink*

Superhero cake and cupcake for my pretty niece, Bebeng (a.k.a. Alyssa Faith) on her 3rd birthday. It was a fun and happy superhero party filled with bouncing camps and balloons and games. I love the dessert table we made, aptly directed by our good friend, Jhay Maravilla.

When I used to live in Calgary, I had a group of friends and we probably bonded because most of us arrived in Calgary at almost the same year. Toni is one of them. She became like a sister to me maybe because, firstly, she reminded me so much of my youngest sister and secondly, we hit if off so well from the get-go. Thea is Toni's first born and she turned out to be the group's baby. So fast forward 17/18 years after, here Thea is now, all grown up and formally being introduced to society (as what a debutante's party originally meant in the Philippines).

And of course, her most senior "auntie" gets to make her cake and cupcakes! I said yes because I cannot not be there plus it's a chance to see my family again. This cake was so smooth to make. I had 5 days to make it from scratch, with a lot of assistance from my mom for her materials and tools that I couldn't bring, and my nephews Sef and Maki for helping me bake and set-up at the venue.

I am going to make a blog entry of the cake, specially the crown on the top of the cake (noticed that?? - gumpaste!), on my blog very soon. But I wanna say thank you to Thea, I had to grab these from her page until her mom could give me some more photos.

Love you, be-be Thea! You've always made us proud, shine brighter now as ever!
