Restarting your starter, day 2️⃣
Before we get started, I realized after posting the first video, I forgot to talk about pre-weighing your jar. 🤦🏼♀️ If you caught my edit yesterday, great! If not, you’ll want to move your starter into a different container briefly, give your jar a quick wash or rinse, and then weigh in grams (without the lid.) Jot the weight down somewhere or mark it right on the bottom of the jar. This will making discarding much simpler.
Today, we want to discard all but 10g of starter. (To calculate; take the weight of your jar, add 10g.)
Then, add 25g all-purpose unbleached flour (preferably the same kind as you used yesterday) and 25g spring water (room temp.) Stir until combined. Put the lid on and let sit for another 24 hours at room temp (around 75F.)
📝Notes: At this point, you’ll want to throw out your discard, as it’s not active enough to use. But soon, we’ll be saving that precious discard for other delicious projects. 🍪🧇🍕

📚Class is now in session! Welcome to Sourdough 101. 🍞We are kicking things off by restarting your (previously) dried starter. Here’s what you’ll need:
Supplies-
straight sided jar with lid
narrow spatula
kitchen scale
Ingredients-
5g dried, finely crumbled starter
25g (100F) spring water
20g all-purpose unbleached flour
Instructions-
Combine 5g starter and 25g (100F) spring water to jar. Stir until the dry starter is completely submerged in water. Cover with lid and allow to sit for at room temp (around 75F) for one hour.
After one hour, add 20g all-purpose unbleached flour. Stir with spatula until thoroughly combined. Cover with lid and allow to sit at room temp (around 75F) for 24 hours. (You’ll notice we are using slightly more water than flour for this first feed. This thinner, more hydrated starter allows for increased activity for yeast and bacteria. Moving forward, we will always feed with equal parts flour and water to maintain a 100% hydration starter.)
📝Notes: If you’re following along using the instructions we provided with our starter kits, you’ll notice these instructions are quite different. We made some changes, as we found this method to be more efficient and less wasteful. So toss out those old instructions and screenshot these as we go! ⬆️
‼️EDIT: I failed to mention previously, it’s best to pre-weigh your jar (without the lid.) This will simplify the discarding process significantly. If you’ve already started, don’t worry. At your next feed, you can move your starter temporarily to a small bowl, weight your jar and then resume. Jot down that weight somewhere until you commit it to memory. I generally just mark it on the bottom of the jar with a sharpie.
