Had to make these German short crust cookies when I saw them...super fun..the kids had fun shaping all the little balls!

For the recipe 200g flour
125g butter
1 egg
4tbsp sugar

Half of the dough you will need to add some cocoa powder. We filled it with homemade jam and baked it at 350f for 15min.

Another fun class…we had one giant strudel šŸ¤£šŸ¤£ā€¦and and another more regular sized one…and everyone made their own mixture!

Roggenmischbrot …how you get those cracks is by making sure that after you shaped your bread into a ball, the smooth side (top) becomes the bottom, and the bottom of the shaped ball goes on top.

It’s been a busy month, so I’ve been a bit quiet …and part of me has also been taking some steps back as there have been some opportunities to expand in a way that feels manageable. Last market was great…I had my daughter help…she did the money and did such a good job! Her tip jar was filled and made everyone smile 😊

I’ll be back at the market on June 20th…this week we are closing out school.

After testing numerous homemade quark recipes and methods, I've finally reached a point where I'm getting consistently great results. My goal has been to create the best German cheesecake possible using homemade quark, while also experimenting with different dairy combinations to improve texture and flavor.

For this version, I used 750 g of my homemade quark and combined it with 250 g of thick Greek yogurt to reach the 1000 g of quark mixture needed for the recipe. The result was a creamy, light, and beautifully balanced KƤsekuchen with just the right amount of tang from the lemon.
This is the version that's working best for me so far, and I'm excited to share it!

German Cheesecake (KƤsekuchen) – My Version
Ingredients
* 5 eggs, separated
* 230 g sugar, divided
* 1 pinch salt
* 1 tsp vanilla extract
* 750 g homemade quark
* 250 g thick Greek yogurt
* 35 g cornstarch
* 60 g flour
* Zest and juice of 1 lemon
Instructions
1. Grease a 10-inch (26 cm) springform pan and lightly dust with flour. Preheat the oven to 340°F (170°C).
2. Separate the eggs. Beat the egg whites with the salt and a portion of the sugar until stiff peaks form. Set aside.
3. In a large bowl, beat the egg yolks with the remaining sugar and vanilla extract until pale and creamy.
4. Add the 750 g homemade quark and 250 g thick Greek yogurt (for a total of 1000 g of cultured dairy), then mix in the cornstarch, flour, lemon zest, and lemon juice until smooth.
5. Gently fold the whipped egg whites into the quark mixture in several additions, being careful not to deflate the batter.
6. Pour the batter into the prepared pan (lined with parchment paper) and bake for about 50 minutes at 340°F (170°C).
7. After baking, turn off the oven, crack the oven door open, and allow the cheesecake to rest inside the oven while it cools gradually. This helps reduce sudden temperature changes and promotes a smoother top.
8. Once completely cooled, refrigerate before serving. Dust with powdered sugar if desired.

For the cake you can use the same base as my Black Forest cake batter...the only difference is you will use a full sheet vs a 10inch cake pan, and you bake it only for about 15minutes.

For the filling:
900g of heavy whipping cream
Powder sugar (as much as you like based on taste)

Strawberry jam or a homemade strawberry compote or really any fruit!
