I've been battling with a very tough decision here lately. It brings me great displeasure to announce that Mexi-Kim's every Thursday, Friday, and Saturday partnership at the Walle Rockets truck has to come to an end in order for me to prepare for Mexi-Kim's next move. Unfortunately I had to make a decision based on bottom line, current obligations, and Mexi-Kim's growth. I am grateful to have had the opportunity to feed all of my loyal, regular, as well as all the new customers from this location. I am even more grateful to have had the opportunity to build my brand in partnership with the established business owners at Walle Rockets. Thank you for being a Big Brother in Business to me and my family. I started this venture because my ultimate goal is to have my own Food Truck. This journey served a purpose to me in my eyes. I proved to myself that I make good food that people love and become addicted to, I proved that I am creative and don't follow suit with what everyone else is making, and most of all I proved that I could handle the pressure of cooking and serving for days straight. So now it's GRIND TIME! It is now time to make the sacrifices necessary to reach my goals. For those of you who will be craving my Nachos, Enchiladas, Tamales, Rice & Beans, Tacos, etc. have no fear...I will be back to cooking out of my kitchen when time allows.
