TIPS & TRICKS #5:
I don't know how many of you need to know this but when whipping 9 eggs and a cup of sugar for making a sponge for German Black Forest cake, it needs to be whipped until quadruple in volume. Taking the whisk out and making an 8 on top of the eggs with the dripped "batter". If the 8 stays for 10 seconds without sinking, the consistency is perfect to seive the flour and cocoa into by gently folding.
In the meantime the dark cherries are marinating in Kirschwasser. (Don't substitute .)
Now to go make 400 chocolate curls...not my favorite. I asked for a better curler for Mothers Day. It doesn't arrive until tomorrow. Bummer. Cake is due today. Photos later.
