I'm late, but we're engaged!
I'm trying to post more, but I'm just not good at it. I will try harder, though, as I've enjoyed sharing our happiness with everyone.
It's been an amazing 10 months, I can't believe it's been almost a year already.
We are planning an engagement party, which is something I always wanted, so I hope to share that as well. Thank you to our closest friends and family who have supported us this far! ❤️☺️

Vanilla Cake with a Strawberry compote and Vanilla Buttercream. It's decorated with fresh Strawberries and edible flowers.
This was for a coworker, her birthday is June 2nd but her party was today.
I hope she loves her surprise cake and has a wonderful birthday! 🥳❤️

Vegan Arroz Con Pollo! Using 's Teriyaki strips I chopped them up and threw them in my rice.
I added Red beans and chopped yellow onion, Sofrito and Coconut Milk with Veggie broth.
I also baked some Plantains and roasted some Broccoli for sides.

Tacos! I made this twice this week because they loved it so much!
I used 's Ground Be'f, yellow peppers, tomatoes and onions. Homemade Pico de Gallo as a topper! The tortilla was actually a Spinach wrap I found that was Vegan, it's from and was super delicious!

Today's dinner! Green plantains; mashed, pickled onions, Spanish style Pinto beans and 's Be'f Tips in a homemade brown gravy. This was my first time trying the Be'f tips, they were super soft and tender! Easy to cook and they soak up sauce well.

Using 's Beefless Crumbles to make this Black Bean Beef pasta with Butternut Squash, peppers and onions. Topped with Parmesan Cheese.
I also made a side of broiled broccoli!

I used Beefless Ground Crumbles. I also broiled some Zucchini! Came out super yummy ☺️
