Double Strawberry Cake
A strawberry lover's dream with double the flavor and double the delight! 🍓🍰
📝 Ingredients:
For the Cake:
2 ½ cups all-purpose flour
2 ½ tsp baking powder
½ tsp salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 ½ tsp vanilla extract
1 cup strawberry purée (fresh or frozen strawberries blended)
½ cup milk
A few drops of pink food coloring (optional)
For the Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
½ cup strawberry purée
1 tsp vanilla extract
2 tbsp heavy cream (optional, for consistency)
For Garnish:
Fresh strawberries
Whipped cream

Prepare the Cake Layers:
Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
Sift together flour, baking powder, and salt in a bowl.
Cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Gradually add dry ingredients alternately with strawberry purée and milk, beginning and ending with the dry ingredients. Mix in food coloring if desired.
Bake the Cake:
Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool completely.
Make the Frosting:
Beat butter until creamy. Gradually add powdered sugar, strawberry purée, and vanilla extract. Adjust consistency with heavy cream if needed.
Assemble the Cake:
Place one cake layer on a serving plate. Spread a generous layer of frosting on top. Add the second layer and frost the entire cake.
Decorate and Serve:
Drizzle glaze (optional), pipe whipped cream swirls, and top with fresh strawberries. Chill before serving for best results!
