Celebrate Valentine's Day with my gourmet Ube Cookies.

These homemade thicc, chunky cookies have a gooey center and combine signature Filipino dessert flavors: ube and coconut. Ube (pronounced "oo-bay") is a sweet purple yam similar to taro. The balance of flavors on this cakey cookie is delicious.
