What's a cowboy cookie? A slightly cinnamon oatmeal cookie loaded with coconut, pecans, and chocolate chips! Almost like a granola bar, but if it was a cookie.... but better. They're delicious. And gluten-free and vegan!!

Brown sugar peanut butter cookie, loaded with chocolate chips, potato chips, pretzels, and then topped with a sprinkle of salt.
