A true artisan baker is a skilled craftsperson whose bread is defined by method and ingredients. For most, they make bread this way because of a deep-rooted passion for how food should be made.
This is Carl,
a sourdough starter with a long history dating back to 1847 and the Oregon Trail.
I have regularly shared him with the Spokane community since March 2020. Over 2,000 have been shared locally, and nearly 7,000 have been shared through my volunteer assignment with carlsfriends.net

What started out as a small way to give back to my neighbors, and sourdough enthusiasts around the world grew into something that brought ME purpose and focus during some challenging moments.
The joy I have found in this magical little microbiome is unparalleled.
Three Birdies Bakery is such an incredible friend, and a legendary part of Spokane’s baking community.
I’m literally in awe that she has said such kind things about me 🥹

BIG NEWS:
The Last Bake On Walnut St
This will be the last Sourdough Sunday at The Blue Cottage on Walnut St.
This little blue house has been so good to me and it’s going to be bittersweet to say goodbye. But, Seasons change and we are growing onward and upward.
We are leaving our little homestead in the city for a beautiful home and gorge garden in Spokane Valley, and that means the future of Lucky Lady Bread will look different.
There will be a few month pause in bread baking as we pack, move and get settled in our new home.
Then, I will be back with a new business model, focusing on Pop Ups and Local Markets.
I am also considering a subscription program, and possible delivery -
but it’s all up in the air for now.
Thank you for supporting me as I have grown this little bakery, and created a name for myself in the carb community of Spokane.
This Sunday will be the last of the Porch Pickups.

They will be offering their fresh milled flour for our friends, so you can stock up before baking season begins!
This is a special opportunity to and get your hands on some beautiful Washington wheat.
I’ll be there with that good good sourdough, country loaves, and a few other products that are new to the scene (tiny loaves may be on the list).
I will also have sourdough starters to give away.
The three birdies will also be there, with a homemade lemonade stand!
An old school bake sale,
and a great chance to show young entrepreneurs some support.

Big changes will be coming for Lucky Lady Bread as the days shorten and the weather cools.
Our front porch pickups will transition into something different, and it’s a bit bittersweet for me. There will absolutely still be bread, just in a new way. Things have shifted, and the best thing to do is bend when the wind blows.
For these next 4 or so weeks, let’s enjoy the simple and beautiful little system we have created together- front porch pickups, blues on a Sunday afternoon and extra little treats and smiles.

4 STEPS TO SAVING SOURDOUGH STARTER .. 1. Paint active starter onto parchment paper. 2. Let dry until it easily comes off of the paper. 3. Grind it up or Save the Flakes. 4. Add dried starter to flour and water to bring it back to life This can keep for YEARS
This is what it should look like when you bring a little piece of Sourdough Starter to life. I share a freshly fed stiffer starter, so the fermentation is very strong.
