July 4th Cooking

We cooked up a storm this past week when family and friends were here. Here is a look at some of our meals.
1. Rainy Day Cheese Board. The rain might of kept us out of the pool but it didn’t stop us from putting together a delicious board of cheese, charcuterie, veggies and fruit.
2. Pizza from our dueling pizza ovens. We had two pizza ovens going at the same time and it was fun for each of us to create our own specialty pizza from an (3) array of toppings.
3. NYT Dutch Baby with a tropical banana filling made for a scrumptious breakfast.
4. Our Bagel Board was super good with bagels from The Bagel Station.
5. Dinner Thymes 2 Shrimp and Corn Sheet Pan Dinner was perfect for a birthday dinner made by Marisa, Cass, and Zach.
6. Saturday was loaded with good food. It was spectacular with all the fixings to make West Virginia hotdogs, Chicago dogs, and Kansas City dogs. Plus, so many great salads: (7) a watermelon cucumber salad,(8) peach and tomato caprese salad, and (9) a quick cherry tomato salad with burrata. In addition, our friends brought (10) delicious pasta salads.

Last week we had a baby shower for and naturally, we needed a cheese plate! We put this together for the group and man was it good! We filled the board with a variety of cheeses as well as tons of veggies, nuts, crackers, salami and meats, and spreads. We can’t wait to make another one this weekend when we are all at home together for the 4th!

Prosciutto Wrapped Cod with Cacio e Pepe with Arugula and Lemon Zest

Since we both have fresh pasta, we made Cacio e Pepe. And since we always need to have something green in our pasta, we decided on Cacio e Pepe with Arugula and Lemon Zest. Right up our alley! We added our own Prosciutto Wrapped Cod to round out the meal. Both were super easy and full of flavor!

Baked Orzo with Artichokes

We are loving our Smitten Kitchen Keepers Cookbook! This creamy Baked Orzo with Artichokes is so good. It is full of veggies and we took the suggestion and substituted half of the artichokes for asparagus. It came out crunchy on the top and nice and creamy in the middle. This dish is made all in one pan, which we love. However, we did serve up some chicken sausage with kale alongside of this and it was the perfect accompaniment. It cooked right alongside of the pasta in the oven. We will definitely try this again and maybe substitute another veggie. Delicious!

Easy Chipotle Salmon Burgers w/ Crispy Sweet Potato Fries

It feels like summer is here and just shared her Easy Chipotle Salmon Burger and we knew we had to have it. This recipe uses canned salmon which allows this to come together super fast. It’s packed with so much flavor from the chipotle in adobo, tamari, and lots of dill and cilantro. It is fried and then topped with havarti cheese and placed onto a brioche bun that is slathered in chipotle mayo and topped with avocado and shredded lettuce. You should definitely check out this delicious burger. We paired it with our Crispy Sweet Potatoes Fries which were cut into wedges and tossed with olive oil, cumin, oregano, salt and pepper then roasted in a 425 degree oven for 45 minutes. Yep, we definitely dipped our fries in the leftover chipotle mayo. Make a double batch of that.

Sheet Pan Spicy Ginger Sesame Beef and Broccoli

We cooked up Sheet Pan Spicy Ginger Sesame Beef and Broccoli over Jasmine Rice last night and it was fabulous! She is a magician with her flavors. It came together on a sheet pan which made it so easy and the timing was perfect. The broccoli was crisp tender with some charred edges and the steak crisped up and had so much flavor. The addition of the pickled ginger that cooked up with the steak was a game changer! We’re gonna want to add that to everything now. We also loved the spicy Persian cucumber salad that topped it off and the drizzle of spicy mayo. 😋

White Wine Coq au Vin

The cool evenings this week prompted us to make this comforting lighter springlike comfort dish. White Wine Coq au Vin from Well Seasoned Cookbook was perfect. We both used chicken thighs for this dish and frying them in bacon fat gave them so much flavor. Plus, it is full of veggies and a rich flavorful sauce. This dish only took about an hour and a half to prepare but it has the richness and body of a meal that has simmered all day. We will be making this again!

Baked Crunchy Chicken Tenders with Creamy Sun-Dried Tomato Pasta with Melted Burrata

Marisa was in the mood for pasta and burrata so we, of course, went to and found the perfect recipe. Her Creamy Sun-Dried Tomato Pasta with Melted Burrata was quick and we even learned a new technique. The pasta sauce comes together in the blender and then is combined with a little butter and 3 1/2 cups of water along with the uncooked pasta. Everything cooks together leaving you with perfectly cooked pasta in a creamy sauce. We added spinach the last five minutes because we love our greens and it worked great. It wilted right into the sauce. It was all poured over the creamy burrata. It was a great spring recipe. We topped it off with a riff on her Baked Crunchy Hot Honey Chicken using the same method but skipping the hot honey. We will definitely try this again!

Tangy Garlic Dijon Pork Tenderloin and Crispy Brussels Sprouts with Tahini Caesar

We are trying a recipe by from her new cookbook Well Seasoned. These Crispy Brussels Sprouts with Tahini Caesar were calling our names. And, we decided to pair them with our own Tangy Garlic Dijon Pork Tenderloin. Perfect Pairing! The sprouts are roasted and come out with a delicious crispy exterior and piled on a bed of creamy tahini caesar dressing. They are then topped with salty fried capers, crunchy smoked almonds, and grated flavorful parmesan. This is so very tasty especially that dressing which we will be pairing with other salads and veggies. 😋 The pork tenderloin was marinated in balsamic vinegar, garlic, dijon, olive oil, honey, and fresh thyme. So simple and yet extremely flavorful.

Pork and Chicken Breakfast Sausage

Marisa is under the weather this week so I am cooking by myself. Instead of making dinner, I decided to try making something for breakfast. I watched making breakfast sausage on her show Girl Meets Farm and wanted to give it a try. She used ground pork. I used the ground pork but also tried the same spices with ground chicken. Both are really good. The fennel, sage, thyme, rosemary, nutmeg, red pepper flakes, salt and pepper bring warmth to both. The brown sugar for the pork and maple syrup for the chicken bring just a little sweetness. I cooked the pork patties in a cast iron skillet and then cooked the chicken patties in the same skillet in the pork fat which lends some fatty flavor to the lean chicken. Both were delicious!

About Us

We are Mary and Marisa, a mother and daughter who may be separated by by distance but are connected by our love of cooking. We always talked about what we were making for dinner in our respective households in our daily conversations. It was then we decided to set aside a night of the week where we would make the same dinner in each of our kitchens. Thursday nights became our night to cook together even though we were miles apart. We love having that time just set aside for each other and our meal. Each of us enjoying a possible glass of wine and the other’s company. We love creating delicious food and sharing the process with each other, our friends, and loved ones, why not share our recipes and love of cooking with everyone. We hope that these recipes bring you all as much joy as creating them together brings us. It’s thyme for dinner!
