In Ezekiel 4:9, God instructs the prophet Ezekiel to combine wheat, spelt, barley, millet, lentils, and beans, grinding them into flour to make a special bread.
Inspired by this, I've created my own Ezekiel Sourdough. This artisan loaf combines unbleached bread flour with a freshly milled blend of Bread Becker's Ezekiel Mix (red wheat, spelt, barley, millet, lentils, great northern beans, kidney beans, pinto beans). A touch of honey adds a subtle sweetness, while water, salt, and, of course, my sourdough starter bring it all together.
This Sourdough bread will be available on my menu next week, I hope you'll try it!
