This brownie recipe is one that started as a recipe I found a while back by Sugar Spun Run that I have played around with a lot! It’s actually a version of her “brownie mix” recipe, which is great because it’s a super easy dump, stir and bake type of thing - and it DOES work awesome as a make-ahead mix to have on hand or to give as a gift! Hers is great as-is, but I can never leave well enough alone haha, so I tweaked a few amounts a bit, but the biggest change I made was to sub powdered/confectioners sugar for regular granulated sugar. That was because although the taste and texture was so good, I didn’t love the look - I wasn’t able to get that nice shiny top that we love to see on a brownie. I don’t know all the science but I decided it could be because, since it’s made to be a simple, quick “dry mixed with wet” recipe, we aren’t including the step of whipping the eggs with the sugar, which is what usually helps get the shiny top - and I *think* at least partly it’s because that helps the sugar to dissolve. And powdered sugar dissolves much easier in wet ingredients-that was my thinking when I tried it anyway 😆 and I did a little happy dance when it worked! But if you only have regular granulated sugar they’ll still taste great, you just might not get the pretty shiny top.
I added some other notes to the recipe card too, but if you have any questions just let me know. & If you make them, please let me know what you thought!!
