It’s here!!!

Ambee Coffee Co Raritan will be officially open for business Monday November 7th 6am-2pm!!!

To start we will be open Monday-Friday, 6am-2pm with the kitchen serving food starting at 6:30am-2pm.

We are incredibly excited to share this new concept with you all. The amount of support we’ve gotten is so amazing. We cherish you and couldn’t have done this without you! Come stop by and say Hello to your New Ambee. 🖤

I literally have been dreaming about making this Heirloom Tomato Tart with Whipped Feta. So here she is in all her glory!

1-Sheet puff pastry
1-egg
3oz-feta cheese
1/3 cup-Greek yogurt
1/2 cloves-peeled garlic
2tbl-EVOO
4-sprigs fresh dill (save some for garnish)
1tbl-butter
2-medium heirloom tomatoes
2tbl-capers
Salt and fresh ground pepper

Preheat oven to 425.
Let puff pastry get to room temp. Unroll and with a rolling pin roll out the creases. An inch from the edges create a square border. Inside of the square(where the ingredients will sit) prick with a fork the whole area. Egg wash the entire puff pastry and stick in the oven for 15 minutes or until golden brown.

While in the oven, blend or sold process the 3oz feta, 1/3 cup Greek yogurt, 2tbl EVOO, 1-2 garlic cloves, a little salt and pepper. Blend until smooth. Then toss in 2 sprigs of dill and fold it in.

Once pastry is done in the oven bast the edges with butter. Add whipped feta mixture inside the borders, layer tomato’s, dill, capers and sprinkle salt and pepper to your liking.

I had to get some red, white and blue out of my system for Fourth of July. What is everybody’s plans this weekend?? Now that things are fully open it’s fun to watch people actually out enjoying themselves. Now someone get over here and eat these cupcakes for me. 😬

ITS A BOY! 🤰🏼 Here are some donuts that represent my soon to be 2nd nephew. 😍We seriously couldn’t be more blessed! When the first baby/nephew of the family was born we were so excited and now he just cracks us up with the things he says. Just because it’s 🌮 doesn’t mean they have to be JUST tacos right? Well I’m switchin’ it up with this Mexican Casserole. This was the perfect dish to throw a bunch of items in that just need to go. I had everything but fresh cilantro and cheese. Just brown 1lb of ground beef/Turkey/chicken(whatever you want) and add taco seasoning. I then added white onions, a can of black beans, half a bag of frozen corn, three fresh jalapeños, four blue corn tortillas to line the bottom of the pan, topped with shredded Mexican cheese and cilantro. Pop it in the oven for 30 minutes @350 and you’re set!

Who can seriously turn down tacos on a regular day? Never mind the fact that it’s Cinco de Mayo. Blue corn tortillas from , queso fresco, cilantro, onion, avocado,lime juice and ground beef. Then I topped it with my favorite jalapeño sauce from Trader Joe’s. YUM!!! I packed myself dinner for work were I made a burrito bowl with all the same ingredients minus the tortillas.

First of all, who can turn down a sourdough bagel? These bagels aren’t your average Joe. Sourdough is so great for your gut that you never feel crappy about having one. Better yet! These ones are green to give you some holiday spirit. St. Patty’s day is drawing near and I have some treats that will make ya drool a little.

As promised the recipe for yummy protein peanut butter cups. Hit that save button so you can make these later. Now of course this is customizable. Add more protein if you’d like, less peanut powder, use any nut butter you prefer and any milk. For the chocolate you can use chocolate chips. Just add some water to a sauce pot and put a heat-safe bowl on top. Add the chocolate chips, a teaspoon of coconut oil (to loosen the chocolate up) and stir until melted.

RECIPE:
🍫2tbl-protein powder
🍫2tbl- nut butter
🍫1/3cup-peanut powder
🍫1/4cup-oat milk
🍫1bag- chocolate chips
🍫1tsp-coconut oil

-Mix all ingredients except the chocolate chips and coconut oil.
-Shape the best you can into round discs.
-Put in freezer for 15 minutes to chill.
-Melt chocolate and coconut oil in double boiler. Stir until melted.
-Using cupcake paper cups on a sheet tray, add a spoonful of chocolate to the bottom. Tap tray against counter to even out all the chocolate.
-Take peanut filling out of freezer and add one disc to each cup.
-Top with melted chocolate and tap tray against counter again to even out chocolate.
-Stick tray back in freezer to chill.
