Had a few asking how the bread turned out: I was letting it cold ferment in the fridge for several days before cooking....

Had a few asking how the bread turned out:
I was letting it cold ferment in the fridge for several days before cooking. That accomplishes a few things... long ferment increases that signature sourdough taste & also breaks down the gluten making it better for you, etc. Smells good though, about to taste!
