One of the best uses of my time EVER! It’s like in real life. We were fortunate enough to get the most amazing weather. It was mostly in 50’s. We had some rough seas with choppy waves but watching was like a dream. We took a cruise Aialik Voyager to see glaciers. It was a 6.5 hour of Northwest Kenai Fjord tour with lunch and a cookie. It was a dream to be able to see with so much wildlife and beauty.

Another family favorite one pot quick recipe. It’s so rich with flavor that you won’t need any side with it. We usually pair it with a Mediterranean Tabouli.

Harrissa Chicken with Chickpeas
Ingredients
Chicken 1 full or cut in 8 pieces
Harrissa paste 1/2 cup
Coriander powder 1 Tsp
Cumin powder 1 Tsp
Paprika powder 1 Tsp
Garlic powder 1 Tsp
Olive oil 4-5 Tbsp
Chickpeas 1.5 cup
Onion 1 cut in cubes
Salt to taste
Black pepper to taste

Method
Preheat oven at 420
In Harrissa pasta add cumin powder, paprika, salt, pepper, garlic powder, coriander powder and some olive oil. Mix well and and marinate chicken with the paste.
In a bowl take chickpeas and cubed onion and marinate it With olive oil.
Add chickpeas and onion mixture with chicken and arrange it in a baking tray.
Bake for 15 min and than cover that chicken with foil and bake it for additional 45 min.
Once chicken is tender and fully cooked remove the foil and cook for additional 10 min until chicken get crisp.

Succulent chicken with chickpeas is ready.
This dish is so versatile and easy to make. Perfect for weeknight dinner.

A quick instant pot Aloo Gosht recipe.

Mutton 2lbs
Potato 3-4 medium size peeled and cubed
Onion 2 fried
Yogurt 1/2 cup
Tomatoes 2 cut in cubes
Green chilies 3-4
Cilantro 1/2 cup
Oil 1/2 cup

Masala
Salt to taste
Kashmiri lal mirch 1tbsp
Turmeric 1/2 tsp
Garam masala 1/2 tsp
Coriander roasted and powdered 1/2 Tbsp
Cumin roasted and powdered 1/2 Tbsp
Red chili powder 1 tsp
Cinnamon stick 1/2 inch
Ginger garlic paste 2 Tbsp

Method
Put Instant pot on a sauté mode and add oil, meat and all the list of stuff in masala.

Fry for 4-5 minutes until meat changes it’s color. Now add all the other stuff except potato, mix well.
Add 1/2- 1 cup water depending on what consistency you want for the gravy.
Put the instant pot lid on and set the pressure cook timer for 14 min.

Once the timer is done, release the pressure and open the lid (be careful with the steam).

Meat should be done 90-95% by now. Now add potatoes to it and put it back on pressure cook for 4 min.

Once the 4 min timer goes off, release the pressure and open the lid. Potatoes should be done by now and meat should be tender and moist. Add chopped cilantro and some green chilies.

Delicious Aloo Gosht is ready in less than 30 min. Serve it with Fresh naan is white rice.
My favorite is Matar chawal.

Pakistan truly has my heart. I grew up there till I got hitched and moved to USA. Celebrating 14 August with cousins was a must. Listening to patriotic songs and enjoying good food is all part of the package... 🇵🇰

Pandemic has put us through a lot. Who knew masks would be part of our attire now. ✈️

Wearing a 😷 8 hrs straight is no joke y’all, the feel of being suffocated is real.
I have been wearing mask at work since March and I would feel drained when I would come back 🏡.

Yes I am an essential worker 😷 so I have no choice to be home like so many people.

And to top it off allergies 🤦🏼‍♀️🤦🏼‍♀️this year has been so bad in NC that every time I get headache and achey throat I would feel like I caught something.... what really helped is this Breath balm...

It literally changed the way I breath... just a dab of it in my nose and I can feel the essential oil working and is a reminder for me to work on breathing deep. Guess what ?? My ⌚️ breathing app is as happy as my nose.

This is the 12th. 12 years of complete chaos. Last year was tough, it was a true emotional roller coaster but we got out of it and survived. Alhamdullilah for beautiful kids and the most loving family around us. True love is not saying I love you, it’s doing things that makes other person feel loved. Striving to be a better me with you along my side ❤️
