With Fall in full swing what does your body want? Heres a great recipe for a soothing bone broth. Now you dont have to feel guilty for throwing away chicken meat you can seem to get off the roasted chicken carcass, You can use this to make a super yummy bone broth- great for soups or to sip on by itself.

Here are three of our favorite ways to make homemade chicken stock! Simmer bones from a whole chicken or chopped chicken parts, simmer for hours or make it in just one. Vegetables, herbs and aromatics are the secret to more flavor.

Spring is one of my favorite times of the year because of the awesome fruits and vegetables that are becoming available again seasonally! With Mothers Day this weekend how about treating your loved ones with a Strawberry-Rhubarb Crisp! 😋

STRAWBERRY RHUBARB CRISP

INGREDIENTS

4 cups chopped fresh organic rhubarb
1 pint organic strawberries, hulled and sliced
1 tablespoon honey
1 cup rolled oats
½ cup coconut sugar
¼ cup grass fed butter
1 teaspoon ground cinnamon

INSTRUCTIONS

1. Preheat the oven to 350 degrees

2. 
In a medium bowl, stir together the rhubarb, strawberries and honey. Transfer to a shallow baking dish. In the same bowl, stir together the oats, coconut sugar and cinnamon. Mix in the butter until crumbly, and spread over the top of the fruit.



3. 
Bake for 40 minutes in the preheated oven, until rhubarb is tender and the topping is toasted. Serve warm.

Heres the recipe for the overnight oats I posted a couple day ago. What a tease to post the picture with no recipe. 🤨

OVERNIGHT OATS
Serves 1

INGREDIENTS

1/4 cup organic rolled oats
1/2 cup organic almond milk (sub: cashew, coconut or Oat milk)
1 tablespoon organic ground flax seed
2 tablespoons organic h**p seed
2 tablespoons chia seeds
1 tablespoon organic collagen powder
2 tablespoons of organic pumpkin seed
2 tablespoons organic unsweetened coconut
Pinch of sea salt
pinch of organic cinnamon, cardamom (optional)

ADDITIONAL OPTIONS:
Almond butter
Walnuts
Almonds
Pistachios
Fresh Berries

INSTRUCTIONS

Mix together all the ingredients in a pint size mason jar or tupperware container. I like to make up 2-3 portions for the week on prep day.

Place in the fridge overnight.

The next morning, stir in more almond milk if desired. You can also warm before eating if you prefer. Then top with your favorite toppings.

CABBAGE STEAK
Serves 4-5 side portions

INGREDIENTS

2 tablespoon Avocado Oil (can sub Olive or Coconut)
1 large Red or Green Heads of Cabbage, sliced to 1” thick slices
salt and pepper to taste
1 teaspoon fresh organic lemon juice

INSTRUCTIONS

Heat skillet over high heat, add the oil and allow it to dance across the surface of the pan, once evenly dispersed add the cabbage slices until they are golden brown on one side, about 3 minutes.
Flip and brown on the other side, season with salt and pepper.

Home made Soy free, low acid Larb G*i, I thought I had to give up on this dish when I became sensitive to soy and peppers 🌶 so this recipe is a huge win in our household! 👏 Give it a try!

LARB G*I

1 lb Ground Chicken (breast, thigh or combination)
1/4 Cup water (if using lean chicken)
1/2 Cup Red Onion (thinly sliced)
1 Tbsp Toasted Rice Powder (see instructions below to make own at home)
1-2 Tbsp Fish Sauce (to taste)
2-3 Tbsp Fresh Lime Juice taste first as well)
1/4 Cup Fresh Cilantro leaves (chopped and packed)
1/4 Cup Fresh Mint Leaves (while leaves)

For Serving:
1/4 Cup Coconut Aminos
Fresh butter Leaf lettuce cups
1/2 Cup Cucumbers (sliced or chopped) I like mine peeled too.

INSTRUCTIONS

1. To make the toasted rice, add about 2Tbsp sweet sticky rice grains (or whatever white rice you have) to a pan over medium heat. Toast until the grains have some color to them and become fragrant. Then add to a spice grinder or blender and grind. If you don’t have a spice grinder use a strainer to remove any large pieces that might not have gotten blended. You want to end up with a fine powder.

2. Cook the ground chicken with no oil, thoroughly and keep the juices in the pan. If using chicken breast add about 1/4 cup of water to make it juicier.

3. Once the chicken is cooked, remove from heat and stir in sliced red onions, the residual heat will wilt the onions.

4. Then add the toasted rice powder, lime juice, fish sauce. Stir and incorporate all the flavors and let simmer 5 minutes.

5. Finish by adding whole mint and cilantro leaves. Drizzle coconut aminos over the top in place of soy sauce. Serve with butter leaf lettuce cups and cucumbers. Perhaps a side of steamed rice? Or Congee! That recipe to follow!

Night time Reflux taking over your life? 3 solid tips to help you avoid silent reflux- 1. Sleep on your left side this relieves the pressure on your lower esophageal sphincter as well as places the stomach below the esophagus which reduces the stomach acid from rising into it. 2. Use a wedge pillow or raise the head of your bed 6-8 inches this helps keep any acid from rolling into your esophagus while you sleep. 3. Don’t eat meals late at night, wait at least 3 hours before you go to bed this allows your stomach to empty before you lay down.
