This week, Mikaela’s test kitchen featured a classic: CHOCOLATE CHIP COOKIES 🍪

In pursuit of the most delicious high altitude gluten-free chocolate chip cookie, I made two different recipes and asked coworkers to vote on their favorite overall cookie in terms of taste and texture. Recipe A was the winner by a narrow margin, so I will fine-tune that recipe in my next round of testing by adjusting ingredients, bake temperature, bake time, etc. My fellow treat-loving engineers at work are really enjoying this fun experiment!

This Cars / Tow Mater monster truck cake for our son’s 5th birthday was almost 100% designed by him! He drew out exactly what he wanted (including a tunnel through the cake) and I tried to bring his vision to life. The GF chocolate cake layers with vanilla buttercream were delicious, and the chocolate tires and cookies & crème fudge rocks were all edible too. With that smile, I’d say it was a big hit! 🎉❤️ Oh and I made the cute cake topper and road signs using my machine too!

Our little guy turned ✨FIVE✨ today! He wanted something a little different for his classroom treat this year, and it turned out awesome. I made GF chocolate cupcakes and vanilla buttercream and packaged up a bunch of different sprinkles for his class. I brought little palettes for each kid to hold their cupcake and sprinkles. I also made cupcake toppers in all of Luke’s “favorite things” using my Cricut (with lots of help from Luke!). His class absolutely loved decorating their own cupcakes and one kiddo even said “Luke’s mom is the best maker ever” 🥹🧁

Happy Mother’s Day to all the mamas out there! 🫶 I made this MERINGUE ROULADE from scratch using recipe.

I love baking something new for Mother’s Day or for my own birthday because I don’t have to worry about it turning out perfectly, but this one turned out so amazing anyways! I filled the meringue roulade with my homemade raspberry jam and vanilla bean mascarpone cream, then topped it with fresh raspberries. It was so delicious, we had multiple servings! 🩷

My latest creation for a sweet cowgirl’s 6th birthday! Navy requested confetti cake and strawberry cake with strawberry compote and strawberry buttercream, with all the pink and glittery decorations! 🩷🪩🍓 Her birthday theme was “boot scootin’ bowling,” and the birthday girl and her friends were so excited about the cake.
