EmpireWorks Reconstruction logo cookies for a team-building event. They were a hit!

Wedding cake and cookies for a beautiful bride and groom. The cake’s three tiers are, from bottom, chocolate with mocha buttercream and chocolate ganache, vanilla with vanilla buttercream and strawberry Gran Marnier filling, and strawberry with strawberry buttercream and strawberry Gran Marnier filling. All buttercream is Italian Meringue buttercream. The cookies were either vanilla sugar or chocolate sugar with vanilla royal icing. All were a hit.

When faced with leftover mango curd and vanilla Italian meringue buttercream, an admittedly happy conundrum, it’s time to make individual tarts, fill them with the curd lightened with whipped cream and freshly beaten egg whites, and top with now lime-enhanced buttercream.

We are making practice wedding cakes for the big event in August, our son’s! Since moving to the tropical Oaxaca, Mexico coast, baking has taken on a whole new set of challenges (for one, the butter melts rather than creams so speed, not my strong suit, is imperative). Presenting mango sponge cake with mango curd filling and vanilla Italian buttercream frosting.
