Each is baked in small batches for the holiday table, so ordering ahead is the best way to make sure your favorite is waiting for you.

Is dark bread crust burnt?

Not necessarily.

As bread bakes, heat transforms sugars and amino acids at the surface of the loaf. Those browning reactions create much of the crust’s toasted aroma, deep color, and complex flavor.

A pale crust may look gentle, but it often leaves flavor undeveloped.

We bake our sourdough until the crust is deeply colored, crisp, and aromatic—because color is part of the flavor.

Dark is intentional.

What does small-batch baking really mean?

It means every dough is mixed, monitored, divided, shaped, scored, and baked with our hands involved throughout the process.

We watch how the dough is fermenting.

We adjust to temperature and humidity.

We feel whether it is ready rather than asking a production line to decide for us.

Small batch does limit how much we can bake.

It also allows us to give each loaf the attention it deserves.

This is what Neighbor Loaves looks like in action.

Today we delivered 13 fresh sourdough loaves and 8 dozen chocolate chip cookies to the Community Assistance Center (CAC), helping put locally baked food into the hands of neighbors facing food insecurity in our community.

And today's delivery marks something we're especially proud of: *more than 90 loaves have now been donated through the kindness and generosity of Forge Bakehouse customers.*

Neighbor Loaves started with a simple idea: when our customers help us share the cost, Forge Bakehouse can bake a little more and pass that bread along to someone who could use it.

Why does Forge Bakehouse use organic ingredients?

Because bread this simple leaves nowhere for an ingredient to hide.

When a loaf begins with flour, water, salt, and starter, the quality of each component matters. We choose organic ingredients as part of our commitment to thoughtful sourcing, transparent baking, and bread made without unnecessary additions.

Organic is not a magic word, and it does not do the baking for us.

But it reflects the choices we want to make about the ingredients entering our kitchen—and the bread leaving it.

Bread can only be as good as the flour that goes into it.

Flour isn’t simply a neutral base. Different grains, varieties, protein levels, milling methods, and harvests all influence how dough behaves and how the finished bread tastes.

For our Country Sourdough, we use organic flour selected for strength, flavor, and character, along with whole-grain flour that brings more of the grain into the loaf.

Good fermentation matters.

Good flour gives fermentation something worth working with.

What makes sourdough rise?

Not a packet of commercial yeast.

Our Country Sourdough is leavened with a living starter, a culture of flour and water inhabited by naturally occurring yeasts and lactic acid bacteria.

As that culture ferments the dough, it produces the gases that help the loaf rise and the organic acids that give traditional sourdough its distinctive flavor and character.

It’s a slower process, but that’s the point.

Natural leavening isn’t simply a substitute for commercial yeast. It is the foundation of what makes sourdough sourdough.

What does long fermentation actually do?

The secret to flavorful sourdough isn’t a secret ingredient.

It’s time.

Our Country Sourdough ferments slowly for more than 24 hours before it reaches the oven. During that time, the sourdough culture and naturally occurring enzymes transform the dough and develop a broader range of flavors and aromas.
The result is bread with depth, character, and a flavor that can’t be created by rushing the process.

At Forge Bakehouse, we give fermentation the time it needs.

Because time develops flavor.

Weekend plans? We’ve got bread and treats for that.

Fresh sourdough, English muffins, hamburger buns, cookies, granola, and more will be at DHA Farmers Market this Saturday.

The only difficult decision is whether to leave with one loaf or three.
