I love blueberry summers! I get my blueberries from a local farmers market and its unlike any other blueberries I’ve ever had! Unfortunately it is only available for a few weeks in the summer! I wish I bought more to freeze! They are perfect in these lemon zest cakes with blueberry compote filling! And what do you do when you have extra batter? You make miniature versions for your friends!

I am so behind! It has almost been a year since this cake! This was my first attempt at a fondant ice cream cake. 🤦🏻‍♀️ Way too much moisture. But luckily this design was forgiving! “Shiny wrapping paper”? Sure! Why not!
